Dried fruits are more calorically dense then their fresh counterparts and they often have added sugars. 1 cup of unsweetened raisins is not the same as 1 cup of processed unsweetened raisins. Processed foods simply compact more food in the same space. I eat a limited amount of unsweetened whole dried fruit everyday. They are yummy.

Hi just discovered you - really fascinating especially that fat leads to insulin sensitivity and carbohydrates can lead to cardiovascular problems. Just wondering is the resistant starch reduced or removed when the frozen or cooled carbs are re heated?

Saturated fat leads to insulin resistance not sensitivity. Resistant starch is still present reaction is permanent until microbes ferment them.

Is WFPB safe to do post VSG (five years out)? Even after 82 lb weight loss after the surgery, I am still insulin resistant and type II diabetic. I wish you and your channel would’ve been available before I made the decision to have the surgery. Fully believe eating this way would’ve taken care of the problem making it so the surgery wouldn’t have been necessary. We weren’t taught any of this during the required six months of nutrition classes pre surgery. The majority of the time I regret having had it done. Can’t change it now, but really want to go WFPB now. Since they drilled into us during nutrition classes that protein (60-80 grams a day) is the most important and to be eaten first, followed by low carb veggies if you have room for them, it is confusing now to know what to do. We were told to avoid fruits and any non low carb veggies. I’ve also been told for years by nutritionist my endocrinologists sent me to over the past three decades that I am to avoid fruits, grains, and non low carb veggies. No wonder we are a confused and lost world full of insulin resistant type II diabetics! 🙁

Problem is that animal protein with a modest amount of vegetables and starches keeps me super full. Plant protein (cant have tofu) along a modest amount of vegetables and starch do not. Vegan diets rely on a very large amount of vegetables to makeup for this, but I will never eat a large amount of vegetables. I really don't like them. I can do a cup at each meal, maybe two cups as a salad sometimes if it's the right vegetables, but that's it.

I remember decades ago, reading about eating fruit before a meal is better for your digestion. Because if you eat fruit after a meal, then it sits on top of your food and creates acid

Is coconut oil a healthier choice than butter?

  • @kalindaburtenshaw4392

Coconut oil is also mainly made of saturated fat. But it is at least plant derived. Might be ever so slightly healthier than butter, but best to cut down all oils to keep blood sugars better. And avoid saturated fats to keep your blood vessels flowing better for the long run. Extra virgin Olive oil is better. But still has some saturated fat in it believe it or not. I just use a bit of extra virgin olive oil, and that’s about it. Don’t use just olive oil…you need extra virgin to avoid the chemicals that plain olive oil is extracted with. All the best.

No, they are both saturated fats. Saturated fat from plants has the same effect on the body as saturated fat from animals. Both should be used in moderation, if at all. Also if you are going to use them, choose organic/ pasture raised/less processed versions

Immediate survival does not equal longevity. Yes. They lived longer then would have without insulin but over time they developed our modern day chronic western diseases because they were eating the wrong quality foods. Hence nutrition is so complex. Short term gains with blood sugar doesn’t not mean one will have long term success.

Dr. Liu, thank you for your informative and interesting posts. I have so many questions... The first one is I think I heard you say you're a double board certified Dr.... with speciality in infectious disease. And I respect that very much. However as most of these posts seem to focus on nutrition... is it reasonable to expect you to be an expert in this field? There is another "Dr." out there pontificating on nutritions whose doctorate is in chiropractic... so ? I hate content-poor presentations. Yours are like drinking from a fire hose.. so fast I have trouble following all the statements. Such as the relationship between dietary fat and insulin... and the references came and went so fast! Did you ever tell us what the contains the most vitamin C? I missed it.

Something is wrong with the fruit bar example... 1. Nobody eats a CUP of fruit bars. You eat one or two with other things as a snack or after a meal as a dessert. 2. Dried fruit get quickly rehydrate if one drinks some water. So it is equivalent to fresh fruit in the about of liquid ingested. 3. Two of these bars is only 120 calories. NOT 2,400 calories. 4. If there was concentrated apple sugars add to these bars, it would have to state that in ingredients. I assume there are ONLY dehydrated whole apples and whole blueberries. That includes all the fruit fibers. 5. One can tell from the dark color of that bar you were holding that it has a nice portion of the berries in it.

Eating the whole bag is 2400. Which I easily did as a med student hungry and tired. The point of the illustration is how easily calories can be consumed eating foods that are processed. Adding water doesn’t change the caloric absorption of the dried fruit. I fresh apple fits over 1 cup and is 95 calories and 1 cup blueberries is 80 calories. Sorry for the confusion. I’ll have to clarify the illustration. Thanks for pointing that out.
