Gordon is putting out his toughest challenge yet to fellow Mentor Richard Blais....can he come up with a Next Level Recipe just by watching Gordon's viral Chicken Wing recipe? Will Richard copy Gordon or go for something in his wheelhouse? Especially since he's using the Bottom Kitchen Utensils! Either way, he's being judged by former contestant and @biteoriginals host Tini Younger! Will he impress his former mentee?

INGREDIENTS
Neutral oil, for frying
1 pound chicken drumsticks
Kosher salt
Freshly ground black pepper
Dredge
½ cup all purpose flour
½ cup rice flour
2 tablespoons cornstarch
Freshly ground black pepper
Kosher salt
Lemon Pepper Sauce
½ cup unsalted butter
2 tablespoons garlic paste
2 tablespoons lemon curd
2 tablespoons white soy sauce
1 tablespoon hot sauce
Kosher salt
1 teaspoon liquid seasoning
Freshly ground black pepper
Garnish
Scallions, sliced
Sesame seeds
Parsley, chopped
Lemon wedges
PROCEDURE
1. Heat your oil to 350℉.
2. Prep your chicken: Use a paring knife to scrape the skin of the chicken from the tip of the bone down to the flesh, exposing the bone completely.
3. Season the chicken wings with salt and pepper.
4. Make the dredge: In a large mixing bowl, whisk together the all purpose flour, rice flour, cornstarch, black pepper and salt.
5. Toss the wings in the dredge to coat completely. Shake off any excess dredge and place the wings into the hot oil and fry until golden brown and the internal temperature of the chicken reaches 165℉, about 5 minutes. Remove the wings to a wire rack and season with salt.
6. Make the sauce: In a large skillet, combine half the butter, garlic paste, lemon curd, soy sauce and hot sauce. Bring the mixture to a simmer and season with salt, liquid seasoning and plenty of black pepper. Remove the sauce from the heat and stir in the remaining butter until it melts completely.
7. Toss the wings in the sauce and sprinkle with sliced scallions, sesame seeds and chopped parsley. Serve with lemon wedges.

    lol the look of some of them pans and such in the basement.. Swear they where throw around. bounced off the walls. Maybe was banged with some utensils. Some torture were done to the equipment down there.. It funny and that whisk. What was that used for before food. love the video and I love me wings too.. Sticky and full of heat..

    Extra virgin olive oil has a low smoke point so it burns and tastes bitter - that’s why you need a neutral oil with a high smoke point 👍

    I love chicken wings and I've never had those kind Chef Ramsay made, they are beautiful. However if I was ordering in a restaurant I would move towards Chef Blaze's.

    I worked in a pizzeria for 12 years we never breaded the chicken wing. The two most important things about making chicken wings is the type of oil and the quality of the sauce.

    Yes MSG can be found in many items. Does not mean you add it in powder form. There was quite a few places mid 2000’s that were dumping it in everything. I can still taste the horrible Chinese food at the time. Likely not forget it for a long time. Funny part is the food was great before the trend. It’s an unnatural taste like a bad salt effect. In low amounts from ingredients it’s fine. I think the Blaze Wings are better, Gordans do not look like it’s meant to taste good.

    Is there any substitute of seasoning that’s not garlic I’m only asking because I love cooking but I’m highly allergic to garlic and I’m also pregnant last time I had garlic when I was pregnant with my first born my throat started to close up so if you have any suggestions I would greatly appreciate by the way this really hard food allergy to handle

    I've always thought that too but I've come across some reputable sites that say extra virgin olive oil actually has a high smoke point so idk what to believe about that. I just know I like grape seed oil for high heat cooking so I'll stick with that haha. I would post the links for you but comments with links get sent to spam I guess. You can easily find it with a simple search though

    By a low smoking point, low heat equals smoke....been working in kitchens for 25 years and I can tell you from personal experience that extra virgin olive oil smokes at a very low heat, it has lots of organic " impurities " which are what gives it the flavour when used in dressings or used to dip etc. The same is true , to a more pronounced extent " with butter, where the dairy solids will burn and leave you with an unusable frying medium.

    Day 5 of asking for a recipe/substitution without gluten (only using coconut flour because that's the only type of flour I can personally have), no sugar, no starch, no dairy, no nuts/grains, and no eggs. It sucks not being able to eat normal things and I'm hoping that someone has some sort of solution so I can eat baked things again ^^ Note: If the creator wants me to stop then I 100% will!!
