Cajun Gravy | How To Make Cajun Gravy | Spicy Brown Sauce | Spicy Hot Gravy | Cajun Brown Sauce

In this recipe, I will show you how to make a Cajun Gravy. This Cajun gravy is “kick-it-up-a-notch” good. If you are looking to spice up your rice, beans, sausage, chicken, crawfish or shrimp dishes with a spicy hot gravy, then you are going to love this spicy brown sauce.

Ingredients:
- 1 tbsp butter to sauté vegetables
- 1 stalk of celery minced or 1/3 cup or 35g
- 1 small onion minced or 1/2 cup or 60g
- 1/4 cup or 35g red bell pepper
- 2 cloves of minced garlic
- 1 tbsp bacon grease
- 1 tbsp butter
- 2 tbsp flour
- 1.5 cups or 356ml veal stock
- 1/4 tsp Worcestershire sauce
- Dash of Tabasco sauce
- 1 tbsp Cajun spices (see spice mix ingredients below)
- 1/2 tsp oregano
- 1/2 tsp thyme
Cajun Spice Mix:
- 2 tbsp paprika
- 1.5 tbsp powdered thyme
- 1 tbsp garlic powder
- 1 tbsp celery salt
- 2 tsp cayenne pepper
- 2 tsp white pepper
- 2 tsp black pepper

    What's the best substitute for the veal stock? We only have chicken, beef, and vegetable stock around here. This looks soooo delicious! I'm going to try this!

    Proper use of the Cajun trinity in your gravy. Also respect your use of bacon grease, very nice brown roux, it's all about patience. Great looking gravy, Creole aproved!

    1 "Rib" of celery right? 1 "Stalk" would be a whole lot more! :) Love the recipe! Could you double everything except the 'Holy Trinity' of vegetables in the beginning to make more?

    I’m from south Louisiana and it seems to me that people from out of state label anything from Louisiana as Cajun, but the truth is there are other ethnicities living in Louisiana besides Cajuns and we all cook and eat foods with these Louisiana spices. Try substituting the word Louisiana for Cajun when you describe our foods and spices and you’ll be spot on cuz we all put in on this culture, not just Cajuns.

    @@thesauceandgravychannel Yes of course. The reason I said what I said was that there are many races and ethnicities in Louisiana that all contribute to the culture and cuisine of Louisiana. That includes the old line folks like whites of French and Spanish descent, and of course Acadian descent (Cajun) as well as blacks and mixed race people, American Indians and people of German descent. Then the people of later influence like Italians, Irish, more Germans and then recent influences like Vietnamese and Hondurans. The traditional culture and cuisine of Louisiana is called creole, which includes us all and is so much more than Cajuns, which is only one component in the mixture of influences that is Louisiana culture and cuisine.     when it comes to cooking anybody can cook its not hard. but to make sauces is absolutely scientific. why do you think ppl like heinz has such secret ingredients that just nobody can copy. it takes forever to learn that stuff. i can cook most things pretty dam good but when it comes to sauces and gravy I just cant... i gave that up. so i subscribed to your channel and maybe i can learn something.

    @@thesauceandgravychannel ya i watched some of ur videos and im like thats how my grandma did it. but even i tried this and it just never works for me. it ends up tasting like mud every time. its worse than shaq at the free throw line i get an L every time.

    @@hvacwiz7877 wow worse than shaq at free throws is pretty rough. My suggestion is to take small steps and expand. I would try the gravy and fry sauce I posted today. It's a basic gravy method. Once you master it you can use that same method with other meats, vegetables etc..

    William Sonoma has a really good veal demi glace. You can use it and through in a bouquet garni and thicken it up a bit with a little beurre manie. I saw you also visited the website and sent an email thanks for checking it out as well. Let me know if you hsve any other questions.
