Butterscotch Chocolate Chip Cookies + Using a Portion Scoop
Butterscotch Chocolate Chip Cookies (yield: 2 dozen)
Butterscotch
4 oz (113g) butter
1/2 c (107g) dark brown sugar
1 tsp (6g) fine salt
1. Add butter, dark brown sugar, and salt to a pot over medium heat.
2. Whisk continuously until the mixture thickens and reaches 300F (150C)
3. Spread onto a lined sheet pan and let cool and harden.
4. Once cool, break into small pieces.
Toasted Milk Powder
1/2 c (56) nonfat dried milk
1. Add the dried milk in a thin layer on a parchment lined sheet pan and bake at 300F (150C) for 5-10 minutes or until golden.

1 c (200g) sugar
1 c (213g) dark brown sugar
2 Tbsp (14g) toasted milk powder
2 eggs
1 tsp vanilla extract
3.25 c (455g) AP flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp (6g) fine salt
12 oz (340g) milk chocolate, chopped
butterscotch from above
1. Cream butter, sugar, dark brown sugar, and toasted milk powder together until fluffy and lightened in color, approximately 4-6 minutes. Scrape down the bowl.
2. Add the eggs and vanilla one at a time, waiting until the first is completely incorporated before adding the next.
3. Mix in the dry ingredients on low speed just until there is no visible dry flour.
4. Add the chopped milk chocolate and butterscotch from above.
5. Cover and refrigerate the dough for at least two hours.
6. Scoop onto a parchment lined tray. For a number 24 scoop (roughly 2.5 Tbsp) bake at 375F (190C) for 10-12 minutes or until golden brown just around the edge.

This sounds so delicious, do you maybe have an alternative to using the milk powder? I would love to make this, but I’m a bit constrained on costs and can’t go out to buy things I don’t have

You are everything I’ve ever wanted in a baking teacher! In the past I’d spend ages looking for examples of what happens when a certain ingredient or aspect is adjusted, or I’d try it myself making a big ol’ mess in the process. Not only do your videos provide so much info in such a short and sweet slice, you also make these shorts feel so warm and welcoming. He made learning so accessible and objective. There's too much subjectivity in teaching tips and tricks in alot of cooking stuff I've seen. But I'm so glad he's not about how its made what make it how it is.

@@benjaminthebaker I baked them too! I have some questions if you don’t mind, should the pastry dough be pretty thin when we roll them out to cut them? And what level rack in the oven do you recommend for these? Mine turned out a bit burnt sadly, but I just scraped it off and they were still delicious 😂

@@hannahwillis9838 I’d say like 1/4 inch thick. Like how you’d roll a sugar cookie dough out. Id say the middle rack, or which rack in your experience isn’t too close to the heat source. My oven is veryyyy slow but his timings were perfect for me. Maybe check yours earlier because yours is slightly better at cooking. Check 10-15 min earlier. Know which rack from other cooking will cook the most moderately. I hope this helps you. :-)

@@xolio1993 Thank you! this helped a bunch :) last time I made them it seemed like I didn't have enough dough to make it not too thin and 20x10 inches, maybe I am overestimating sizes. also, I just got a brand new oven so this is probably why they cook so fast lol

@@Primobelmont it's pretty good! It definitely adds a subtle caramel note to foods. If you've ever made something with brown butter, it's a similar taste.

@@Primobelmontit's great and you can add it to SO much. The other comment say's it's like brown butter cookies but I don't think it does in the slightest. 🤷♀️ If you already have a brown butter cookie recipe you like use that and just add the toasted milk powder for a richer caramel flavour.

I made these cookies. They’re amazing! I only had light brown sugar, and both the cookies and the butterscotch tasted really good. Thank goodness we still have our old candy thermometer! Next time I’ll make sure to get some really high quality milk chocolate. Since the only milk chocolate bars I had were from Hershey’s I used Ghirardelli milk chocolate chips instead.

Did the butterscotch melt in the cookies my friend? I have those nobody-wants butterscotch candies and thinking of melting them then breaking them and adding them to the dough.. I’m hoping they’d melt.

I typically like a bunch of cooking shorts then go to my liked videos and move them all to a Playlist at one time. That way i dont have to stop watching shorts to add the video to my playlist. But you have to be disciplined to not like all types of shorts otherwise you'll have to filter through the recently liked videos.

As much as I stay away from sugar, I would definitely give this cookie a try.
I absolutely love your content and am so happy for you and your channel growth! Maybe you can do a series on baking substitutes compared to regular recipe ingredients, and how they affect the final product. Ex: applesauce, flax “egg”, etc.

we do oatmeal rasin cookies for cristmas and last time we did whole oat which should turn oats, to make sure they were soft enough to use once we mad most of the dough we put the cider we used to mull the rasins into the cookies dought and let it sit to be fully absorbed by the oats. they didnt last long eneought to make it past cristmas eve.
