Bulgarian Mish Mash - The most perfect dinner for one
Hey thanks for swinging by! This classic Bulgarian dish is so simple and delicious. a few veggies in a pot, plus a couple of eggs and a chunk of cheese, and you've got a healthy, hearty, satisfying dinner. This version of Mish Mash is just my interpretation, and it is my current favorite. If there's one thing I've learned about Bulgarian food, it's that there is lots of room for interpretation. No two grannies will make the same thing in the same way, and I think that's pretty cool. Here's the ingredients list:
Bulgarian Mish Mash
• 1 tsp oil
• 1/2 onion
• 3 cloves garlic
• 1 red bell pepper
• 1 medium-large tomato
• 2 eggs
• 40g feta cheese
• 1 sprig of parsley
• Salt to taste
About me:
I'm Paula. I'm a former professional cook and overall eating enthusiast.
I started this channel because I love making dinner and I love eating dinner.. but mostly it's because all I've ever wanted in life is to have my own cooking show. When I didn't get a callback after submitting my tape to Food Network in 2003, I put that dream to rest for a while. Until I clued in, I can do it myself on KZread!
I love sharing the tips I've learned from professional kitchens and tidbits from my holistic nutrition education. But mostly I just want to show you how to make dinner. (See what I did there?) 😄
My cooking style is simple but flavourful. I cook with a lot of veggies but I'm not vegetarian. For me, a typical dinner is plant-forward, budget-friendly, non-fussy, and really delicious. As a step-mom, I make a lot of family-friendly comfort food, as well as a lot of simple, realistic dinners for one (or two).

I’m telling ya. This was definitely the best batch I’ve ever made. That reaction was 100% genuine. Did I get the publish time right this week!? 😅
Ooh now this looks delicious! Never heard of it, but I love all the ingredients so it can't be bad! Thank you for your content. As a cooking enthusiast, I'm enjoying being your new fan!
Greetings from Plovdiv Bulgaria! You can also use green peppers as well. Enjoi Bulgarian cuisine!

Hello! I love Plovdiv. We were just there this past summer! ☀️⛰️
I showed my wife how to cook this tonight, we added a few extra fresh herbs (garlic chives and dill) and some chopped cabbage. It was excellent, a perfect dinner for two! thanks!
I’ve made it twice, and this is definitely on the regular rotation. It’s keto-friendly and also the perfect recipe for all my summer farmer’s market has to offer. Thanks again for another winner!

Ahh that’s so great to hear!!
Paula, I just *love* every video you make. This Mish Mash sounds amazing... I'm going to the store to p/u some feta (along with some nutritional yeast). The garden is overflowing with peppers and tomatoes! I frequently make your vegetarian burgers (I add extra Worcestershire sauce and Tamari... and rub it on the formed patties as they cook). Honestly, you are such an amazing woman to share time with... trust me, if I were younger, Id travel to Western Canada and steel you away from your fortunate boyfriend. I LOVE you('re) wonderful recipes... would love to travel in Italy with you. Un abbraccio!
Bulgaria is known not only for its peppers, but also tomatoes, yoghurt, cheese, etc. And just for the record I would use green pepper - the taste is different, but the red one works too. Enjoy it!

My mother in law uses green peppers too. I love it both ways! 🫑🌶️
Love this! My mouth was watering and then your reaction at the first bite sealed the deal. I’m making this ASAP.
Sweet! Gotta try it. Love the exposure to interesting dishes. You do that so well, Paula. Thanks a bunch.
Making this tomorrow as I just got some peppers, the eggs with the bit of Bulgarian Feta cheese should make this so luxurious, yum!!
I'm really happy I found your channel! I feel like it's really special when you find a cooking channel with the same flavor inclinations as you. You're kind of like the more low key Alison Roman. As someone who loves dairy and looooves veggies hehe. Your recipes are always so approachable and I've made quite a few of them. I'll definitely be trying this one. I make that bleu cheese lemon pasta with toasted nuts a lot thanks to you!

Nice!!!
I am from Turkey (close to capadoccia) and my grandparents used to cook this. Also my mother, sometimes. I dont think this dish has any name in Turkey😂
OMG! This is the way my (Puerto Rican) dad cooked eggs for us kids, minus the cheese. Delicious! I'm eager to try your recipe for mish mash. Thanks!

i can't wait for the next mish mash!
Looks awesome. I’ll make it for Jamie.
New viewer here! Just found your channel and I watched your no tomato salsa video first, now this one. Guess I figured out what to binge watch tonight lol. This reminds me of almost shakshuka. I bet if you needed to stretch this a bit to feed a larger family, this would be incredible over pasta or couscous. So excited to stumble on over to your channel. I'll be subscribing now ❤️
that looks so tasty.. would be awesome on some crusty baguette

Believe it or not, I haven’t! I can’t imagine it would be bad!!
Did you ever try making this in the instant pot? I’m about to give it a go… BTW, I’ve been on the hunt for ways to make frozen veggies taste good (for weeks when I’m slammed and can’t do proper food prep). I made something like this with some frozen grilled roasted eggplant, peppers, onions, zucchini, etc, and had it with quinoa. Not bad!
need more chese, i eat chease atleast 5 times a week and cheese needs more attention. also did you know that you can eat a watermelon with white cheese it is a sublime combination between sweet and salty on a sunny day.
Move over cup-noodle and beans on toast, a new Dorm Food has come along, this time touting anti-scurvy benefits
Are you Bulgarian? Is this where ypu began cooking?

Now in going to top make me one. Add a toast to it. It is his at delicious. Ass bBalkan ad will say be kakav parsley bee? It is just decorating green.
Try it with no eggs or cheese. Same ingredients but more bell peppers. Red and yellow because the green ones will give it a "grassy" taste. It's going to taste sweeet. Maybe stir in a handful of cooked rice at the end to thicken it. If made outside in a cauldron, it will get an amazing smoky taste
looks like chakshoka is middle easter dish

Really similar! I think the main difference is scrambling the eggs rather than poaching them whole
If you are in Varna you should know that it is not feta cheese. It is Bulgarian white brined cheese. You foreigners must stop calling it feta

Don’t be so salty. She did a great job. I’m Bulgarian and live abroad and I also call this cheese feta..that’s the broad name for it

Just for the record, I hate salty
Well, Bulgarians don't eat this for breakfast
