Hong Kong Style Bubble Waffle (雞蛋仔) with Red Bean
Growing up, Sundays were reserved for visiting grandparents in Chinatown. Being the brats that we were, my brother and I would quickly run out of things to keep ourselves busy in my grandparents’ 500 sq ft apartment. To make us behave, my mom would promise us a stop at Bubble Waffle Lady.
Bubble Waffle Lady had a red stall off of Mott Street in Chinatown. She was strategically placed between an elementary school and a church - prime real estate. With three bubble waffle irons going and a crowd of rowdy kids and tired parents swarming her, she would still take the time to get to know every face that stopped by her stall. My brother and I would be memorized by how skillfully she would spoon the egg batter into one bubble waffle iron while flipping a cooked bubble waffle out of another, while still asking my mom how business was going and how my grandparents were doing.
Bubble waffles are a nostalgic treat for me so imagine my surprise when I noticed these things popping up all over Instagram. Here’s an easy recipe for Hong Kong style bubble waffles. If you get your hands on a bubble waffle iron, I hope you give these a try.
Ingredients:
½ cup of all purpose flour
½ tsp of baking powder
½ tbsp of custard powder
1 tsp of tapioca starch
1 egg
⅓ cup of white sugar
1 tbsp of evaporated milk
75 ml of water
½ tsp of vanilla extract
½ tbsp of vegetable oil
½ cup of anko (red bean paste)
More vegetable oil for greasing waffle iron
Directions:
1. In a medium bowl, sift together flour, baking powder, vanilla pudding powder and tapioca starch.
2. In a large mixing bowl, whisk together eggs and sugar. Mix in evaporated milk and water.
3. Add the flour mixture and whisk well, make sure there are no lumps. Whisk in vanilla and vegetable oil. Refrigerate batter for at least 1 hour.
4. Brush oil over both sides of the waffle iron. Heat each plate separately over medium heat.
5. Pour about ¾ cup of the batter into one of the waffle iron plates. Rotate plate to spread out the waffle batter. Spoon adzuki beans into each well. Place the other waffle iron plate on top and flip. Cook each side for 2-3 minutes. Lift the top plate and flip the waffle out on a wire rack. Enjoy!
Notes:
This recipe is for one bubble waffle. Change thing up according to preference. Not a fan of anko? Try chocolate chips or dried cranberries. Want more flavor in your batter? How about matcha or chocolate?

    Yes, they're also called eggette, pancake balls, pancake waffle, egglet and, my favorite, puffle.

    Love the video and the channel. I would like to suggest one thing, could you remove the audio of you cooking? The sound of you stirring something or putting a bowl do aren't important and they take away from the awesome background music. Just a thought. Still love the channel and recipes!
