    Sorry that I somehow missed your comment as it was in a reply of someone else's comment. My recipe is a homemade recipe. I haven't tried any bulk waffle mix or crepe mix so I won't be able to tell you the difference. Sorry about that. But I can tell you, the consistency of my recipe is in between a waffle batter and crepe batter. Thinner than waffle batter, but slightly thicker than crepe batter. Hope that helps.

    Thank you, Jenna. I'm not too sure why you want to skip the custard powder. It's the main ingredient to give these Eggettes the distinct egg flavor. So, I highly recommend that you don't skip it.     you're most welcome. The evaporated milk gives this waffle the wonderful and rich flavor that regular milk can't provide. So I highly recommended that you don't replace it. but if you can't find evaporated milk, maybe use heavy cream so the thinker consistency is similar to evaporated milk. hope that helps.

    Hi Amy. I tried using this recipe but only one side is covered with batter and the other side not despite turning like how it's supposed to be. Is it because the batter too thick? Or it get cooked too fast on one side? Also is it ok to skip evaporated milk?

    Thank you so much for your feedback. The amount of batter used should be able to cover both sides of the pan. But keep in mind, if the pan you used is different than mine, that could be why it wasn't enough batter to cover. Also, after adding batter, I immediately close the pan and flip it upside down to let the batter cover the other side of the pan before it's all cooked. Regarding the evaporated milk, it's what give these waffle bubbles the unique flavor. So, I don't recommend skipping it, unless you have dietary allergies, etc. Hope this helps.

    Can I use some sugar substitute (stevia, Splenda etc) and would any plant based milk work (or at least yoghurt/Greek yoghurt) instead of evaporated milk? xx

    I am not too sure if using sugar substitute would work because I haven't try that. Beside sweetening the waffles, the sugar also help these waffles get the gorgeous golden brown color during cooking. I'm just not sure if stevia or splenda can do the same. You can substitute the evaporated milk with any non-dairy milk you like. Just keep in mind that the flavor would turn out different because the evaporated milk gives these waffles the rice flavor they need. So, maybe try coconut milk as it add a nice coconut flavor, at least. Hope that helps.

    +Lydia Le It will probably tastes the same but the texture might be different. Because the bubble shape waffle pan will make each bubble crispy on the edges and soft and spongy on the inside.     Sarah C Like most other waffle batter, if you make it the night before, it should be alright. I won't recommend that you make it a few days ahead though. It's quite a simple batter, so it's always better to make it fresh on the day of. Hope that helps. Let me know if you have other questions.

    If you follow this recipe, you'll get the crispy outside and soft inside texture. I use medium heat over my stove. Not sure what temperature it is as our stove would probably be slightly different. You need to test out a batch to see what works for you. Hope that helps.

    +Vinod Daryanani You're most welcome. I don't recommend substituting the evaporated milk with whole milk. The reason is that evaporated milk has less water content compared to regular milk. Therefore, the flavor is a lot more concentrated. Also, the custard powder has the rich egg and sweet aroma that a regular eggs don't have. Plus, it'll be too much liquid to add if you replace the dry custard powder with an egg. It'll completely change the consistency of the batter.     Here's the link to the recipe. It's also posted right below the video. This recipe is meant for home cooking, hence 1 recipe only make 3 waffles. You can multiply the recipe amount to whatever you need. But you might need the proper equipment for the mixing. I don't know what recipe or what type of vanilla custard mix you saw from other place, so I won't be able to tell you the difference. I am guessing, if they called it a custard mix, it's probably has sugar, flour, or some other ingredients that you don't need in this recipe. So please stick with custard powder of you follow my recipe. Hope that make sense.

    Hi Amy, thank you for sharing your receipt. Is the eggettes half filling inside? The Authentic HK style eggettes should only has half of inside filled (soft) and the other side no filling and remind crunchy inside-out. And of course the entire outside should be crunchy, otherwise it's just like miniature "paper wrap cake" which is most people making. I have been looking for a place to have it but unfortunately still haven't find it... all so called HK style eggettes has full filling.. :( I think people forgot or don't know what's the Authentic HK style is.. really sad...

I tested out this recipe for a long time to achieve this recipe, that's as authentic as those you can find in Kong Kong (my home country). ;) I grew up eating this HKG street food more often than I probably should have! :D To answer your questions, yes, these Eggettes are crispy on the outside, and fluffy on the inside. There's an air pocket in each eggette, I guess that's what you refer to as "half filled"?Give this recipe a try, I'm sure you'll love it too! Happy cooking!

    Hi Amy, thanks for your quick reply!! Yes, I guess that's call air pocket, half of the inside pocket is not filled and Not fluffy; only half of the pocket is filled and "fluffy". I went to HK recently and tried the Eggette at Lee Keung Kee North Point Egg Waffles. That's the exact taste and texture I had almost everyday after school when I was kid. It's so unfortunate that I don't find it at where I live now, and people here are thinking full filled pocket is good. :( I'll try your recipe when I get a chance (need to get the makers first), will let you know how it goes. Thank you again! I really love to eat and really picky on food.

    Oh...How lucky that you get to visit HK! I'm always home sick, especially for all the street food! And of course, for my friends and family over there too. :P I totally can relay when you say "love to eat and really picky on food", because I am the same way! That's why I started my food blog and KZread Channel! Because some authentic/traditional food are just hard to find when you're away from your home country! About the waffle maker, my Dad got that for me when he visited HKG (in ShangHai Street). But I know they sell similar ones online as well. :)

    hi Amy Tong, I wanna make it more crispy and keeping it crispy for a long time after cooked. same as "北角鸡蛋仔“ .Their egg waffle look so hard when they remove it from the pan that's why it more crispy. Do you have any solution for that??? I heard some one said add more Tapiaco powder, Or more water(thinner), Or heat 7 minutes with temperature(150c) Or high temperature heat. Please advise me. Thanks a lot!!!!

    Kenny Tang Adding more tapioca flour and deduct some regular flour is good advice because the tapioca flour is what makes the crust crispy. More water to thin out the batter would work too but you probably need to cook the waffle longer. You've got to test out the amount to get the consistency you like. My kids like the tender inside and crispy outside texture and that's what you get from my recipe. You can do some adjustments from there. 😉 Happy cooking and hope you'll have success on your testing.

    I haven't try it on an electric stove top. Not sure if the pan can conduct heat evenly on a flat surface since the pan itself had irregular shape on the outside.

    You're welcome. Yeah, I guess if they are selling these to make money, I could understand why they don't want to share their recipe. You can experiment a batch and see how it turns out. Since I haven't tried the savory version, I can only guess/imagine the taste. The best is to get hands on and make a batch to test it out. :D That's how I create most of my recipes. ;)

    I have a recipe that I always make as I don't like sweet stuff. I would like to share it with anyone who is interested. -- 150 gm flour, 30 gm rice four, 1 ½ teasp Baking Powder, ½ teasp Baking soda, ¼ teasp salt, 2 Tbsp sugar, oil, 250 ml milk, 2 eggs - separated Filling :- Sausages, onion - all diced. frozen mixed veggie. Fry, season it and cool them. Cheese also diced but don’t fry -- optional Beat egg white with pinch of salt until peak. Beat all the ingredients in another bowl until smooth Then fold in 1/3 of the beaten egg white with the hand egg beater is the best way and then the rest of egg yolk batter. Add in the fried sausages mixture. Nate : -- You can make the waffle like pancake. Or cook in your bread toaster sandwich pan if you don't have a Waffle maker.

    I try to make but why is separate after cooking? Is it like that ? Not like other I make when it's cooked its steamy together ..

    Ujbevs Lim It shouldn't be separated. It never happened to me like that when I make this. Do you flip the waffle pan upside down right the way after you pour the batter in? If so, the batter would evenly distributed and becomes one piece. Hope that helps.

    Yes, the custard gives these bubble waffles the traditional rich eggy flavors that they need. Otherwise, they won't taste the same.

    The tapioca flour is the key ingredient to make these bubble waffle crispy on the outside. Also, did you use the stove top pan like mine or an electric one (I know many people couldn't find this stove top version). This one is cast iron so th heat is distributed evenly and help the waffle crisp up. So if you use an electric one, you might need to heat up slightly higher. Hope that helps.

    Many baking shops in Asia carry custard powder. I usually bet it online here goo.gl/hwKgPe Not too sure what shop has it in Philipines though.

    I know there's egg substitute out there in the market that you can use. (I personally don't use them so I won't be able to recommend you a grand) Or, just use more custard powder and mix it with water for the right consistency. The custard powder has great flavors and it's one type of egg substitute for many people. But each brand might contain different ingredients. You might want to check out the ingredient list to make sure you're okay with it before using. I personally love the flavor of Bird's brand. Hope that helps.

    For the stove tp Bubble Egg Waffle Pan like this one here: goo.gl/N3Xr7c You can pretty much use it anywhere. Here's the electric version: goo.gl/XTTw3w Some of my friends got this one and said it works well. You can use it in Hong Kong with an adapter. If you live in Hong Kong, you can find the stove top version from ShangHai Street. That's where my father got mine. Hope that helps and let me know if you have other questions. :)

    Malabika DasDas There isn't any substitute for tapioca flour that I known of. It's what makes these bubble waffle crispy on the outside. So, it's an important ingredient in this recipe. Tapioca flour is available in most supermarket these days. If it is because you can't find it in the market, you can get some online here: www.amazon.com/gp/product/B0019GZ87Y/ref=as_li_tl?ie=UTF8&camp=1789&creative=9325&creativeASIN=B0019GZ87Y&linkCode=as2&tag=a0464-20&linkId=TBXHNWTLZGIPYVZP The reason why I don't recommend you to make a substitution on the tapioca flour is because that's what makes these waffle crispy. If you use a substitute, you might not get the classic crispy edges for these egg waffles! Hope that helps.

    Sorry that happened to you. I don't have an electric one so won't be able to tell you the settings. Hope your next try will be better. A few of my followers told me they have the electric one and works well. Guess you need to try different heat level to get the one you like. Happy cooking!

    Do you have a set of measuring cups? You do need exact amount for this recipe. And 3/4 cup is 3 quarter of a cup, NOT 1 cup+1 cup!!! To make it easier for you, 3/4 cup sugar = 150 grams; and 1 cups all purpose flour = 125 grams. Hope that helps.

    Oh...I see what you mean now. You're correct, the measuring cups usually don''t come in 3/4 cup. But if you use a 1/2 cup + 1/4; or 3 times of the 1/4 cup, that equals to 3/4 cup that you need. :) Hope I'm not making you more confused. Have fun making these Eggettes, they are really yummy!
