也可以用韓國的麥芽粉 malt powder 代替米趜,用類似 rice syrup 的作法。

可以用麥芽來發酵 但粳米做出來的甜度較底 也沒黏性

老師,想請問一下:糙米糖漿用法跟麥芽糖是否一樣?老師這個是糙米還是胚芽米?

理論上是的 但是實際操作我沒試過 可能有些細微的地方需要調整

Koji is a mold that is at the heart of many different Japanese ferments. It is used to make miso, sake, amazake, rice vinegar, soy sauce, and mirin. Koji is grown on rice or barley, which are then used as the starter culture for further fermentation you could find it here amzn.to/3Fxluig
我想問 1. 8小時的發酵是必須全在50-60°C嗎?另外好奇問如果溫度低於50°C會有什麼問題? 2. 如果我不想要如此濃稠度高的糖漿,能否不進行最後的大火加熱,在擠出液體後就作使用?定還是要至少熟沸一次? 感謝!!!🙇🏻

1. 發酵溫度是最適合米麴菌活躍的溫度,溫度不對會影響發酵的結果,例如無法發酵被壞菌污染變味 2. 煮沸可殺菌,和蒸發水份,水份決定糖漿的保存期限,水越多保存期限越短越容易變壞
如果没有Koji Rice, 可以用其他代替吗?

I don't get the part with the oven. So I can place it into turned off oven for 2 hours and underneath place a bowl with a hot water? Is it correct?

Yes I will recommend to place a oven thermometer inside oven and please check the temperature frequently

理論上 凡是含有澱粉質的殼類甚至馬鈴薯都能做 依據不同穀類的糖份和澱粉質含量 做出來的甜度跟味道就有所不同 普通米的糖度較低 打不打拋影響的是發酵的速度 穀物的外殼愈硬發酵速度減慢
