    What Jess is referring to in the video. The Maillard reaction is the chemical reaction that occurs in the presence of heat between amino acids and reducing sugars that results in food browning thereby producing fresh aromas and flavors. Maillard is pronounced as “my-ard”, and is named after the French chemist Louis Camille Maillard, who figured out the science behind the Maillard reaction in 1912.     I make this for my son but I add cut up pieces of baguette and the little balls of mozzarella. He loves it! He is a garden baby so he loves anything tomatoes.

    Oh, that sounds extraordinarily divine. I have some smoked mozzarella that I usually put in an omelette. I'm thinking I'll do the omelette and add this over the top with the mozzarella in the tomatoes. Thank you and Jess!

    She ain’t kidding, folks! Delicious! I can also recommend a broccoli, cauliflower, onion, brown butter for those cooler months! I even sprinkle a bit of cheese over the veggies before the hot butter hits. Trust me on this one! 😉

    My go to lunch last summer was inspired by this recipe. Two slices of tomato with the browned butter, sprinkle of fresh herbs, and the second magical ingredient “goat milk crème fraiche” from a local farmers market vendor. All between two slices of bread, heated in a cast iron skillet so the goat milk crepe fraiche softened. Nothing better! Can’t wait for my first one in a couple weeks!

    I fell in love with brown butter when I was introduced to it by a German friend many, many years ago. I just pulled potatoes from our garden yesterday and cooked some with brown butter and parsley, like in Germany. I think I pulled mine off the heat too soon because it didn’t have that nice nutty flavor. It goes from yummy to burnt instantly so I was afraid to burn it and it was bubbling so much that I couldn’t monitor the color of the butter very well. I still enjoyed my potatoes for dinner and some more fried up with eggs for breakfast this morning. I can’t wait to try the brown butter when my tomatoes come in. Thanks for all of your joy and enthusiasm.

    The first time I tried this was a couple years ago when you made them with Ben and shot a video. I used Yellow Pear and red sweet 100 cherry tomatoes. It was PHENOMENAL!

    As a chemist, I discovered the Millard reaction in high school and it is one of the reasons I went into chemistry! I have loved brown butter sage on just about everything. Heard about it back in the 90s. Grateful that you are spreading the word about simple cooking that tastes divine!!

    Absolute Magic. Brown Butter tomatoes are a delightful surprise. I've been enjoying this Roots and Refuge / Farmer's Table delicacy since you mention it a few years ago on of your Roots & Refuge, Arkansas, video. Jess, you’ve inspired me to conduct all kinda Brown Butter experiments: steamed snap beans--heavenly; oven roasted roots like golden beets and carrots; things like snap peas, mushrooms, and onions need to softened by some form of cooking before over pouring Brown Butter, but they are divine stand alone or together. Brown Butter even elevates baked goods like cookies. Big love and gratitude.

    Thank you Jessica! I tried this after watching your video. I went outside and picked one of my German Johnson tomatoes. You are right, the first bite I immediately thought I tasted lobster in drawn butter! This is delicious. Wow! A great recipe.

    Another reason to use stainless instead of cast iron or nonstick is so you can see the color of the butter. It's a pretty wild guessing game to tell when it's about to go too brown in cast iron (you can tell with your nose, but it's LOTS harder and why would you do that to yourself?), especially if you have foamy butter. THANK YOU for sharing this again! I'm away from my home tomatoes, but I'm going to the farmers market in the town I'm visiting first thing in the morning to get tomatoes for this! I CAN'T WAIT.

    @patriceg1100 I agree, I first tried brown butter by accident. I got distracted making my fried eggs for breakfast and my butter was dark but since it didn't smell burned I quickly added my eggs to fry. Delicious!

    You turned me onto this a few years back. Thank you, thank you and YUMMM!!!! It is now a regular thing for me. I do a slight variation... I use unsalted butter otherwise it is too salty for me. I also throw some greens in the bowl with the tomatoes, usually arugula but sometimes spinach. I often have it with a scoop of cottage cheese on the side. SO GOOD! Now I have to wait for tomatoes (another month from now here at 9000ft+ in the Colorado mountains). Maybe I'l pick up some store bought... hmmm?

    Jess, I saw you make this on R&R to share with Ben, and I had a huge Kellogg's breakfast tomato sitting on the counter, so it became the trial recipe. Oh, heaven! Sometimes now when I make it I like to toss a couple sage leaves in the butter to fry up as it browns. Many yummy iterations yet to be discovered. I make a baked feta to take to potlucks, and I can see putting these tomatoes on top!

    I have never tried this recipe but when you tasted Jess your face just was a joy to watch so because of it I will try as soon as my tomatoes ripe.     ❤ I learned it from reading! Growing up i've read a lot. Both my parents were college educated, so they had a vocabulary. One time, I went to my mom and I was talking to her about the guys "lay-pulls" he was wearing. She looked at me confused and said what? I said lay pulls! Again, she asked me what, for clarification. By this point, I was irritated, not wanting to feel stupid. I hollered out. You know, the laypullss on the guy's jacket. Doing an exaggerative hands moving up and down my chest as if it were on a jacket. She said OH! You mean lapels!! I never lived that down for the next twenty years.She laughed so hard! Wonderful memory ❤️ I'd only ever read it in a book😂

    I was watching as I was making my lunch and decided to try it. I do love tomatoes. I have my first ripe Hungarian Heart tomato and I made the recipe and it was okay but I’m afraid I wasn’t as enthusiastic as you. Would have probably preferred my tomato with cottage cheese or a fried bologna and tomato sandwich.

    I love this! I want to try it adding in some fresh basil, and we have fresh home made goat cheese, so some blobs of that, getting kind of melty from the warm butter, is making my mouth water!     My mom made this when I was growing up! It’s one of my favorite ways to have tomatoes. It’s especially good with Kalamata olives over angel hair pasta with pepper. You can also add mizithra cheese, we called it “snow” on top haha!

    Just made this with my black cherry tomatoes and I’m hooked. I added a bit of garlic, after I tasted it as you made it and it too was fantastic. With the leftover brown butter I sautéed some yellow squash with onions, it was delicious. I can see your point about brown butter elevating a dish, thank you so much, I can’t wait to share this wonderful dish.

    This is a summer staple for me & thank you Jess, I discovered it from you years ago! Of the several varieties of tomatoes I grow, my "go to's" for this dish are a combo of my Juan Flamme (orange apricot sized) & Paul Robeson or Berkley Tie Dye tomatoes. The brightly sweet citrus of the Juan Flamme & the smokiness of the Reds combined with the browned butter is spectacular. Sometimes if I'm feeling extra fancy, I'll toss an herb in the butter to go with. Sage, tarragon or thyme work very nicely! Thanks for sharing this recipe again for us. Everyone needs to give this a try!!😊

    What also really good is when you fry bacon while the grease is hot poor it over tomatoes. Heavenly taste!

    We watched this video last night and I made it for our breakfast using 3 types of tomatoes- Dr. Wyche’s yellow, Paul Robeson, and Cherokee Purple. It was scrumptious (and I think that’s the only time I’ve ever used that word.) I even finished it off with Maldon flaky salt. Tomato and mayo sandwiches are great but brown butter tomatoes are next level.
