RECIPE:

BREAD BOWL:
▪360g or 1 1/2c warm water (86F/30C)
▪3g or 1tsp instant yeast
▪15g or 1Tbsp white distilled vinegar
▪110g ripe poolish (Stir together 55g or 1/4c warm water, small pinch instant yeast, 55g or 1/2c bread flour, cover and allow to rise at room temp for 12-24hrs)
▪550g or 4 3/8c bread flour
▪11g or 2tsp salt
Add ingredients including all of the poolish to a bowl and stir to combine until a clump has formed. Continue to mix with a very wet hand until fully combined and no longer clumpy. To us a stand mixer instead, just mix to combine.
Cover and allow to rise for 30min. Conduct strength building folds (stretch and folds and slap and folds) as shown @1:45. Cover and ferment for another 30min. Repeat the stretch and folds/slap and folds. Cover and ferment for 1 hour.
Flip floured dough onto floured work surface then divide dough into 4 even (250ish grams) pieces. To shape degas, then follow shaping instructions as shown @2:58. Place shaped balls onto parchment and proof covered at room temp on a non-stone or steel surface for 60-90min.
Split parchment onto 4 quadrants so that each dough ball is on it’s own small piece of parchment. Mist with water then score the top of each dough ball.
Transfer dough balls onto preheated pizza stone, spritz with water again, cover, and bake at 460F/240C for 15min.
After 15min CAREFULLY remove lid (escaping steam will be v hot). Rotate loaves and spread apart. Continue baking for 20min.

SOUP
▪350g or 1 large white onion, small diced
▪125g or 1 small bulb fennel, small diced
▪20g or 6 cloves garlic, minced
▪125g or 1 large carrot, medium diced
▪250g or 2 small yukon gold potatoes, medium diced
▪375-400g or 3-4 small heads broccoli, medium diced
▪75g or 1/3c olive oil
▪Salt
▪50g or 1/3c flour (gluten free flour works too)
▪1500g or 6 C. chicken stock
▪250g or 1c heavy cream
▪225g or about 1 3/4c - 1 7/8c cheddar cheese (shredded)
Preheat large pot over med-high heat. Add oil. Add vegetables and a pinch of salt. Stir. Sweat veg for 6-8 mins. Once beginning to soften, add flour. Stir to coat veg and cook for a couple of minutes, just to cook off the raw edge, before adding in chicken stock and cream. Stir, reduce heat to med-low and continue to cook for 10min.
When veggies are tender, but not mushy, reduce heat to low. Scoop about 3-4c of soup into a tall sided sauce pot and blend with immersion blender (or blend with standard blender). Add blended soup back into the original soup pot and stir. Stir in cheese. Taste for seasoning. I typically add an additional pinch of salt or two.
Garnish with black pepper and an additional pinch of shredded cheese!

For those on WeightWatchers, the Magic Spoon cereals are 3 - 5 points per serving depending on which flavor you get. For comparison, Honey Nut Cheerios are 6 points per serving.

@@quatha It also tastes nasty and gives people the $hits. We bought some and had one bowl and didn't even finish it. We threw the rest of the boxes away because we didn't want to subject anyone else to that experience.

So your bread recipes and instructions make baking much easier to do. I have never been a baker but loooove fresh baked breads. The bread bowls have always been a hit in our house. I, however, have always relied on Panera for them. I made a batch of your bread bowls and we are hooked. I did the poolish the day prior and it makes a huge difference. I think our yeast wasn't the best so I didn't get the big dog rise like yours but that's to be expected. The soup and bowls were an absolute hit. Perfect fort the change in weather. Thanks Bri.

I made this soup and the bread bowls tonight for my family for dinner. I can’t believe how good the bread turned out. It’s like the best bread ever. I didn’t have the aluminum pan for steam so I just spritzed water in the oven every few minutes during the “steam” part. Worked great. Soup was delicious too. Thanks Bri!

I made this soup tonight. It was amazing! The soup was not mushy, and because you showed us what size to cut the vegetables there was a pleasing palette of textures and flavors. I didn’t attempt the bread bowl because it’s a weeknight, but maybe next time!

I made this soup and it is AMAZING! Seriously one of the best things I have ever made. It will definitely be going into my recipe rotation. I didn't have quite as much luck with the bread bowls. I should have added a lot more flour. I only had one turn out okay-ish. It tasted good, and looked awesome. Next time though I'll probably skip the bread and just make the soup.

Really love the pun! We have an immersion blender and they are very handy. You don’t need an expensive one either! We have had a cuisanart smart stick for about 4 or 5 years.
Love these recipes. They look amazing as usual.
This is a really good recipe for beginners (like me) to try out towards the start of your cooking career! There's not a whole lot of technique needed during the cooking process to make it come out right. It's mostly in how you prep your ingredients. Honestly, even if you cut your veggies a bit too large it's not that big of a deal. You'll still end up with a wonderful and flavorful product. :)
Once again Chef Bri, you remind me why I am a born again “Strength Building Folder.” I know this video is about the soup too, but I just want you to know that once upon a time in my bread baking mania, I was so desperate to get the crumb just right, I actually contemplated using a turkey baster to inject water into the dough at different points during baking. I’m glad I found you before I did that.

I've not seen y our videos before, but I have to say, I like your no nonsense approach. No need to take 20 minutes to say what could have taken 10. So thanks. Your little breads were totally gorgeous! I love making bread!
For sometime now I have used the bread recipe in this video as my go to. The only difference I make it as one large boule. Today rather than use poolish, I used bubbly sourdough discard ( same amount) and it really amped up the taste and gave that complex texture.

Nice job, Brian....another one for my repertoire! Pro Tip: Just before ladling the soup into the bread bowl, place one palm on the outside of the bowl, then using four fingers of the other hand, work your way around pressing outward (from the inside) to gently compress the bread. The result? It slightly enlarges the capacity of the bread bowl - _more soup for me!_ - and the increased bread density enhances the bowl's structural integrity. (I didn't invent this move, but I did use it when serving up Brian's "30 Minute Chowder" a few days ago.)
