Brined Pickle Soup - Zupa Ogórkowa

INGREDIENTS
400 g cucumbers in brine
4-5 potatoes
3 carrots
6-8 cups of stock or broth
50 ml heavy cream
dill
Peel potatoes and carrots. Cut them in chunks and add them to the stock. Bring the pot to boil, reduce to simmer and cook until fork tender. Grate the cucumbers in a food processor fitted with a shredding disc. Reserve the brine. Add the shredded cucumbers into the simmering stock. Stir well. Turn off the heat and add heavy cream. Season to taste by adding some or all of the reserved brine. Top with a sprinkle of dill and serve.

Hello! Pickles are cucumbers pickled in a solution. Usually vinegar or salt brine. What country are you in? In the U.S. for example, a pickle is a cucumber pickled in vinegar, not salt...so if someone just went to the store and bought ‘pickles’ to make this soup, it wouldn’t work at all. The British pickle is pickled in vinegar as well and is a sweet relish type of condiment, which is not suitable for this recipe either. The European market I purchase my specialty items from sells jars of ‘cucumbers in brine’ not pickles. I hope that explains why I deliberately used the term ‘cucumbers in brine’. Thanks!

Cooking Polish i live in canada and i’m Polish yes regular pickles don’t work my mom says it’s a specific kind of pikle she uses to make the soup
