Bread using Rice Cooker | 面包无鸡蛋牛奶和黄油

Hassle buying bread during this stay home period. Why don't make your own bread in rice cooker with only a few basic ingredients that you already have in your home! Flour, sugar, water, yeast and oil! Its so easy you just can't wait to make it!
Rice Cooker Recipe Ep2
Cooking tips:
▷ Water should be lukewarm, ie if you touch the water with your finger, it should not feel anything, not hot or cold. I just use the filtered tap water as the temperature in my country is usually 31 degrees celcius
▷ Cooking time may vary with different rice cooker.
▷ Cooking time will be different if you use another function. If using RICE function, cooking time is about 50 minutes.
▷ Recommend to spread oil to the rice cooker pot. Based on feedback the bread got stuck to the base of the pot ( I did not brush a layer of oil onto my pot because its NON stick )
▷ Add oil slowly for first 8-10 minutes and just knead until oil fully absorbed. No need to knead further as this dough is quite moist. After kneading for 10 minutes, if dough is too sticky, just sprinkle some flour and roll into a ball

Ingredients:
Bread flour 300 grams 高筋面粉 300克 shope.ee/4pdST...
Sugar 30 grams 白糖 30克
Yeast 4 grams 酵母粉 4克 shope.ee/5zpPr...
Water 200 ml 温水200毫升 (lukewarm)(based on feedback some bread flour may not absorb as much water content, so suggest to start at 195ml of water)(一些高筋面粉无法吸收这么高的水分,建议从195毫升水开始)
Vegetable oil 30 ml 菜油30毫升
Measurement in cups (approximate):
2 - 1/3 cups bread flour 高筋面粉 2 1/3 杯 shope.ee/4pdST...
2-1/2 tablespoons sugar 白糖 2-1/2汤匙
1 teaspoon yeast 酵母粉 1茶匙 shope.ee/5zpPr...
3/4 cups + 2 teaspoon lukewarm water 温水 3/4杯+2茶匙
2 tablespoons vegetable oil 菜油 2汤匙

    I would love to try this, but my rice cooker has exactly one setting and that is "cook". It then switches to "warm" once it's done. Works for rice and steamed vegetables. But how can I use it for bread?

    Hi Barbara, really happy that you want to try this recipe. Oh I know which rice cooker you are referring to. I believe you can still use your rice cooker. Probably just press the cook function and let it automatically switch to warm when it’s done. The cooking time may be longer about 45-50 min.

    @@MarvinBug Hi, this is a late response but I just tried it. It did not work with the "cook and warm" type rice cooker. The bottom of the bread started burning within 5 mins of me turning the rice cooker on.

    ChefDave VeganJourney Hi there, my rice cooker pan is non stick. So I didn’t spread oil in the cooker pot. So if yours is non stick I don’t think you need to also. Hope this helps 😊

    My rice cooker doesn’t have a bread option. What other options can I use as substitute? I have white / brown rice, quick rice, sauté, simmer, slow cook.

    @@TheOnlyLilo if you have a sourdough starter, you can use that to make these rolls. The dough is a 67% hydration - I would use 100 grams of sourdough, which is 50 g flour and 50 g water, and then add 250 g flour, and 150 g water to have the same proportions. You might have to let it rise longer, but once it doubles, the recipe would stay the same. I am going to make a batch of rolls with my rice cooker tomorrow. I'm so excited to try this!     I just trying to make it now with a ricecooke that allows me only to cook or to worm, I understood, from another comment that will be fine to use the cook option that last about 45/50min but should I flip if? If so, shall I do it during the 50min cooking or after? And if I flip it after shall I let it cook for how long?

    Sorry 😐 just got your comment. Yes, if your cook option can cook up to at least 50 minutes. Different rice cooker need different duration. After 50 minutes you can test whether it’s cooked. The top part of the bread will not sticky. Once it’s cooked you can flip over. Flip over and bake another 15 minutes 😊

    Hi yeah sure do. Preheat oven to 190 degrees. Bake at 180-190 degrees until the top is golden brown. About 20-25 min 😊

    it will come out cakey. They difference of all purpose flour is that, when its hydrated, it will expand into a ball shaped rather than flat shaped, making the end result is more cakey than bready. You can use them still.

    Amazing recipe ! Just the one I was looking for! Just have a few questions: 1) Can I do this in my instant pot and will/will it not burn on the bottom... 2) I do have a cake mode on my instant pot but since the instant pot pressure cooks,it has a certain water content requirement to come up to pressure... So will it be alright to directly place the bread on the inner pot? 3) And should the sealing vent be kept open or closed when baking the bread.... 4) Also after the bread is cooked, should I do a natural release of pressure or a quick release? (if I'm required to keep the vent in sealing position). 5) Also could I use wheat flour instead of bread flour? Would really appreciate your response as I'm planning to make this today🤗.     Hi Janu, so glad that you find my recipe useful. However, as much as I would like to help, I have not used pressure cooker before. So sorry to break all the excitement. Maybe the pressure cooker manual has some guidance. As for the wheat flour, I assume you meant all purpose flour/plain flour. Yes you can use that. The texture will be less bouncy. No problem about the pressure cooker part.I made it anyways.Just used the saute function on low for 10 minutes on so for each side and the buns(rolls in my case) turned out great! Used whole wheat flour with appreciable amounts of gluten and the buns were well-cooked(not as fluffy as yours though and that was expected with the wheat flour).Will try in a different method and let you know for sure! Thanks again!

    this is amazing! especially since the virus has everyone indoors, i can't wait to try this! my cooker only has the following options though, any advice? saute/browning,pressure cook/slow cook, soup/stew, meat/chicken, rice/risotto/steam. which option do u think i can use in place of the cake option?

    Wow your cooker has so many functions! My best guess is to use the rice 🍚 function. My sisters rice cooker has no bread function also. She used the rice function. But she said it took her 45-50 minutes to bake the bread instead of 25 minutes. Hope this helps ! 😃

    Hey great questions ! 1. Yes I believe you can as long as you dissolve the fry yeast in the water and sugar solution 2. All purpose flour is ok, just that it the texture won’t be so springy 3. My cooker function is bread/cake so yes I think you can use the cake function timing may vary slightly hope I answered all your questions! 😊

    For whatever reason my dough when making bread usually comes out way too hydrated and sticky so I've added more flour to this one. I'll see how it turns out and report back once it's cooked!

    Aah some flour have lower water absorption rate. But it should be ok. If after kneading for 10 -12 min, if the dough sticky, just add abit of flour or oil and form into a dough. Then let it proof after that. 😊 yes do let me know how it goes. Love to hear from you ☺️

    Yup should be fine. Can use white rice function. As for the time, let it auto cook based on the rice function. It will automatically turn to keep warm when it’s done. Should take longer about 45-50 minutes. Then when you flip over the time will probably be about 10-15 mins or longer to brown the top part of the bread 😊 Hope this helps!

    Mine came out great! But I had to adjust the time because I didn’t have the cake function. I just used the white rice function. But, one question, was the dough supposed to be sticky before the first proof? Mine was sticky and had to add some flour.

    Oh I apologise if the instruction was not clear. Normally I pour the vegetable oil on the dough a little at a time over 8-10 minutes. Then once the oil is fully absorbed in the dough, then the kneading should be done. If you use the white rice function, it takes about 45 -50 minutes for the bread to be fully baked.

Next time I will try making it with nuts so my parent can have healthy breakfast. Do you think it would work if I change water to milk instead?

    my dough didnt rise twice the size. is it because there is insufficient water or lack of adequate kneading? the dough felt abit dry. and after first proofing, it is not as soft and smooth as yours, when i tried to roll it to oblong shape, it just doesnt move nor spread much. haha. would you know what could have gone wrong?

    Hi sorry to hear that . Just to clarify so I can help. Did you add flour while kneading? It’s not recommended to add flour while kneading at the beginning. this dough is actually quite moist. If you didn’t, maybe your flour has very high water absorption rate. So you might want to try adding 10 ml water next time. As for the rise in dough. The temperature when I made this bread was about 30-32 degrees Celsius. If your live in a colder place , it will take longer to rise. Also for the kneading about 10-12 minutes is sufficient. The other way to test is you will feel the dough more bouncy and elastic. When you form a ball shape, you press your finger on the dough it will slowly bounce back. Just give me a shout If you need to clarify further 😊

    Hmm...I assume the yeast did turn foamy. Have to wait longer. Sometimes the kneading strength might be different, so the yeast take longer to work the dough ☺️

    Yup sure : 2 and 1/3 cups high protein flour 3/4 cups lukewarm water 1 teaspoon yeast 3 tablespoons sugar 3 tablespoons vegetable oil. Let me know if you encounter anything else you want to clarify. Happy baking 😃!

    Hi there, you can add the raisins two ways. 1. At the beginning mix with the dry ingredients before pouring in the yeast solution. 2. After first proof, divide the dough, then flatten the divided dough with the rolling pin or hand, sprinkle the raisins on the flatten dough. Lightly press the raisins in then shape into the bun shapes 😊

    How come my dough came out runny right from the time I combined the yeast mixture into my flour. There’s no helping it even when I added another half cup of flour into it. Is it the water? Should it be warm or just room temperature? Is it the flour? I used all purpose flour. Is the recipe limited to only the use of bread flour? I did it twice. Same result.

    Hmm...it should not be runny right from the start. The water should be lukewarm, ie about room temperature. In my country, it’s usually about 31 degrees Celsius. If water is too warm then the dough will be more sticky and runny. As for the flour, some are able to absorb less water content. But normally both bread flour or plain flour can absorb up to 65 percent. If your flour can absorb less water , I suggest using 300 grams plain flour and 180 ml water (lukewarm). Let me know if you have other problems

    Thanks for sharing this easy recipe, really like it and I tried. I need some help here. 1st time use all purpose flour, came out very Fluffy and soft inside but outside turn hard after it cools down, then the next day it became very hard. 2nd time I used bread flour, it’s more fluffy and soft but outside still turn very hard when it’s cold. May I know what have I done wrong?

    Ah... I know what you mean. I’m not an expert in this but I find that if you over knead the dough the bread will be more dry and chewy. So next day more moisture will be lost. Usually 10 minutes of kneading will be sufficient. Secondly every rice cooker have different heat level and distribution. Over baking can be one of the reason. You might want to try reducing the time. The other reason is the type of bread flour. Different flours will have different moisture retention. You can test with different types of bread flour to see which one you like best. Hopefully this helps ! ☺️

    Ruyi Asian Recipes I kneaded less than 10mins. First time used Multi-purpose flour, it was dry and second time I changed to use bread flour. Both bread turned hard after it colds down. I will try next time to reduce time. Thank you!

    Oh I see . Don’t try to knead less than 10 minutes try between 10 -12 minutes. You will be able to feel the elasticity of the dough between that time. Underkneading can also cause the gluten to not develop properly which may be the cause as well. Yeah I know it’s super complicated. 😅

    Hi the first bake depends on the heat level of your rice cooker. You can increase to 30 minutes to be safe. The second back it just to make the top part of the bread brown in colour, just need to flip the bread over and bake another 10-15 minutes

    Hi there, yes it takes a while to perfect making bread dough. So don’t be discouraged cos it took me a lot of times before I knew when the dough is kneaded enough. Usually kneading time is about 10-12 minutes. You will feel that the dough is elastic and bouncy and the surface is usually smooth. Also difference flour quality and types affect the texture of the bread. You can use all purpose flour for my recipe but I have not tried using brewers yeast before. I went online to read up on it and apparently you can use brewers yeast to make bread although texture may not be the same as using baking yeast. But I think the fermentation/proofing time may be longer. So as long as the first proof is double in size and second proof is about 50% more then it’s fine. Hope this helps. 😊

    Placing the yeast in water with sugar is mainly to make sure that the yeast is not expired. Sometimes I just add everything. But the yeast seem to act faster when dissolved in water. For baking yeast yes better to see bubbles. I think it’s the same for brewers yeast.

    Ruyi Asian Recipes One more question. Just to check, for instant yeast I also need to put in sugar and water?

    Not necessarily. You can add directly. It’s mainly to make sure the yeast is still active. The other reason is I find that the dough tend to get bouncy and elastic faster during kneading when you activate the yeast in water and sugar first, so the kneading time is shorter and so the dough will retain more moisture. 😊

    I strictly followed the recipe and guidelines, but failed. The dough after baking was heavy and without air pores. it was inedible and they went to the trash.

    Hi not sure why it didn't work out. Would be great if you could explain further. Baked this bread many times and it has not failed me so far.
