This traditional Brazilian cheese bread (Pão De Queijo) is one of the easiest bread recipes I’ve ever made. If you are not familiar with this recipes, this bread is soft, fluffy and loaded with cheese. And it’s not only easy recipe but also gluten free (there is no wheat flour in this recipe).

Makes 16 bread rolls
Ingredients:
1 1/3 cups (170g) Tapioca flour
2/3 cup (160ml) Milk
1/3 cup (80ml) Oil
1 Egg, large
1/2 teaspoon Salt
2/3 cup (85g) Grated mozzarella cheese or any other cheese
1/4 cup (25g) Parmesan cheese, grated
Directions:
1. Preheat oven to 400°F (200°C).
2. In a large bowl place tapioca flour. Set aside.
3. In a large pan place milk, oil and salt. Bring to a boil. Pour into the tapioca and stir until combined. Add egg and stir until combined. add cheeses and stir until incorporated and a sticky dough forms.
4. Shape the dough into balls and place on a baking tray lined with parchment paper. Bake for 15-20 minutes, until lightly golden and puffed.
5. Eat warm or let cool.
Notes:
• Which cheese to use for Pão De Queijo: you can use mozzarella, cheddar cheese, gruyere cheese, combination of serval cheese or any cheese that you like.
• How to serve Pão De Queijo: the best way is to eat them warm while the cheese is melted. You also can reheat them before serving.
• You can store Pão De Queijo at room temperature up to 3 days.
• To freeze them, shape into balls, place on the baking try and bring to the freezer. Once they are frozen, transfer to a ziplock bag and keep them in the freezer up to 3 months.

@@andrewreid380 Marinez (Polvilho azedo) is the best brand of tapioca flour for you to make cheese bread, and if you can find it in a Brazilian store in your location, that'd be better. If it's not available, then go for Bob's Red Mill, if it's also available in your town. Just go ahead!😁

I tried to make this recipe but it didn’t work
my Brazilian friend gave me this yesterday and I'm in loveeeee
I followed this recipe and the outcome was wonderful. I have repeated the recipe a few times, and it has become a house favorite. I was having trouble rolling the dough into balls. I tried using regula flour but it was messy. I decided to soak my fingers in water, and it worked, no more sticky fingers. I hope this helps guys. Thank you for sharing this excellent recipe.

I also wetted my hands to keep the dough from sticking, but I also had to add quite a bit more tapioca flour to the dough to firm it up and make it a little less sticky.

In Brasil we usually use cooking oil! This dough doesn’t seem to be the stickiest but there are some pão de queijo doughs that are really sticky and oil is usually the best thing to make it not stick on your hands

thats a good adaptation for international audiences, but in Brazil we dont use mozzarella and parmessan normally. we use a brazilian cheese called meia-cura

Most frozen cheese breads here in Brazil are made with mozzarella and parmesan.

My favourite food ever!! When I first came to Brazil, I didn't even know about it! I tried it there for the first time on the 2d day and ate it every single day we were in Ubatuba (for 3 months!!!) Pao de Queijo is so associated to my youth. My bag of Pao de queijo in the early morning , after a night out at the boate, watching the sunrise at the Arpoador before calling it a day. But, that being said, as a Brazilian who has lived abroad for 95% of her life, saudades is always in my heart.
Just made this because they sell these super expensive at Starbucks and omg they came up practically the same but better (and cheaper) haha I’m so happy thank you for the recipe

I just made this and the texture is amazing! The dough was clumpy after I added egg so I use my hand to mix the dough until it became really smooth. the result was great! crunchy outside, soft and chewy inside. My kids love it. Next time, I would add 1tbsp of salt and some seasonings such as white pepper, grated garlic and oregano to spice up the taste. Thanks so much for the recipe =)

I am adding coarse sea salt plus a few finely chopped habanero at the very end before baking. nice and apicy
This works if you half the amount of liquid, 40ml oil & 80ml of milk. Using the recipe the mixture is way too runny and it won't rise, the ball will continue to flatten in the oven.

I cooked these with a slightly different recipe before I found out this is Brazilian recipe. This is beyond all, absolutely delicious. I used corn flour because we have no tapioca grown in our country;)

It's interesting to see all these versions of pão de queijo because in Brazil it's not made with tapioca flour and mozzarella or parmesan cheese... 😊

Tip, if the dough is to sticky or shape or knead into balls. Wait 20 mins for it dry and wet you hands with cold water before handling the dough.

@@theslamjamfrincisco2820 I believe she meant she paid $60.00 for the “RODIZIO” which is a tipical “all you can eat r” churrasco made with different cuts of meats, pork, our tipical “linguiça” ( sausage), and a very large variety of salads , cheeses, jams, etc. AND Pão de queijo, which she and her family loves.
My mother made this years ago and i still miss its taste. When i asked her about it she didnt remember anything. I finally found the recipe, cause i had been searching for cheese balls and all sorst of other things were coming

How many balls did the recipe make?
I moved to Boston Massachusetts in 99 and the Italian was excellent and then I moved to Framingham, Massachusetts and discovered Brazilian cooking, everything about it is excellent especially the BBQ! I fell in love with Pan De Queso after frequenting the Brazilian bakery, it has such a unique, rustic taste. Well today I finally will try this easy looking recipe as I gathered all top quality ingredients but I forgot parchment paper, I'll slightly oil the sheet pan to avoid sticking! Here I go, wish me luck 🤞 lol. I love ❤ your recipe, cheers!

For those asking for a substutive flour. The tapioca one will give a "gummy" texture to the bread. Tapioca flour, for those that do not know, is made from cassava. So try to find something similar =)

I bought tapioca starch pearls and put them in a blender so it would take on a flour consistency and it worked just fine (:

wooow you did it so right, i'm impressed!! I'm brazilian and it looks a lot like the recipe I make :) Tip from brazil: you can put two tablespoons of wheat flour, this prevents it from wilting

How did they come out?
I have never tried making this bread and it tastes amazing, it was so easy to do, really easy ingredients, I switched the parmesan for a cheese from my country called queso duro and then added oil to my hands when forming the balls apart from that all was perfect ❤ thank you
This bread was sooooooo good quick and easy to make THANK YOU for the great recipe. The only tiny issue I had was that the dough wasn't firm enough to roll into a ball, to remedy this I freeze the dough slightly, add more flour to the mixture, or I use an ice cream scooper to shape the soft dough.

I've been making these every other day. I love them . I'm gonna serve Christmas Eve with cold cuts. Shaped to their size and a little mustard. Like a mini sandwich. The guests csn stick them in the micro waveif t h e want it warm. Thanks for sharing

tried and tasted. wonderful.
Everything went perfect the first time. But today when I added the boiled milk and oil, it turned into some custard texture. I added more flour but it was as if it melted into the milk.
