❤️ Braised Savory Shiitake Mushrooms Recipe - Cooking with Fen & Lady First
💛 Ingredients (Serves 5):
- 30 Shiitake mushrooms (diameter of 3cm to 4cm, approximately 65g)
- 200-300cc Shiitake mushroom soaking water
- White sesame seeds, a suitable amount for topping
💛Seasonings:
- 1g salt
- 0.5 tablespoon sugar
- 1 tablespoon oil
- 1 tablespoon soy sauce
- 0.5 * ¼ tsp MSG (optional)
💛Main tools:
- Stainless steel Chinese wok
❤️ Instructions:
1. Soak Shiitake mushrooms: Soak 30 Shiitake mushrooms (diameter of 3cm to 4cm) in water, with a small plate placed on top of them to ensure complete immersion. Check after about 1 hour, and continue soaking until the mushrooms are fully hydrated.
2. Braise Shiitake mushrooms: Place the soaked Shiitake mushrooms in a pot. Add approximately 200-300cc of water and all the seasonings. Cover the pot and simmer for about 15-20 minutes until the mushrooms are fully cooked.
3. Adjust flavor and reduce liquid: Check the flavor of the Shiitake mushrooms and adjust the amount of salt and soy sauce as needed. Evaporate the liquid at the bottom of the wok/pot and continue stirring for a few more minutes until the mushrooms have a bite without excessive broth, enhancing the overall aroma.

    ❤️「滷香菇」食材 (5人份) --芬姐與台菜一姐 ❤️ Braised Savory Shiitake Mushrooms Recipe 💛食材: 香菇 30朵 (品種:黑早菇,小中菇--1朵直徑3~4公分,30朵共約65克) 香菇水 200~300cc 白芝麻 適量,裝飾用 💛調味料: 鹽 1鹽匙(=1g) 糖 0.5湯匙 油 1湯匙 醬油 1湯匙 味素 0.5鹽匙(可略) 💛主要工具: 不鏽鋼鍋 (本集使用牛頭牌不鏽鋼鍋,多年前購置,不知還有沒有同型的。) ❤️「滷香菇」作法 --芬姐與台菜一姐: 1.浸香菇:將30朵香菇放入水中浸泡,碗中可上置小盤,讓香菇完全浸至水中,約1小時後剪開查看,直到香菇完全吸水浸透。 2.滷香菇:在鍋中放入浸泡後的香菇。加入約200-300cc的水,再加入所有的調味料。蓋上鍋蓋,開始滷煮約15-20分鐘,直至香菇熟透。 3.調整味道與收乾:檢查香菇的味道,根據需要調整鹽和醬油的份量。請收乾鍋底的水分,再繼續煸個幾分鐘,讓香菇咬下去,不要有太多湯汁,才會更香。

    神田鐵鍋不錯,輕巧,但有時技術不好會粘鍋。不銹鋼鍋也不錯,萬年不壞,缺點就是重。

    朵朵香回覆:「黑早菇」是一種品種的名字,它是冬菇的專屬品種,適合冬天生長,香氣濃郁,口感Q彈。由於種植技術門檻高,種植的廠家變少了。消費者盡量與有信用,品質穩定的農場購買。
