Fantastico well done chef gennaro you are my inspiration when it comes in italian cuisine. . im working in italian resto here in dubai for four years and everynight i watch your video specially with chef antonio . . and because of that i also learn about the traditional cuisine of italian . . thank you chef more power to you and in FOOD TUBE TEAM for making a great food everyday. .

learning to cook Mackerel because it sells for 1.50 a pound here. I could not believe it. So bought a bunch and threw it in the freezer.
You must taste it for me gennaro!

Is it possible to use some kind of white fish? Its hard to get some Good fresh fish beside frozen ones here where I live. But it looks so delicious that Im thinking about going to make some effort and trying to get that Mackerel!

Nice one Tim, Thanks very much for taking the time to point out about the fish, hadn't thought about the fresh and salt water bit.
Garlic, chilli, parsley, capers, tomatoes, olives...olive oil...salt pepper...same ingredients every dish...not forgetting stock and white wine...occasional shallots, anchovies...

I can see why. However, the head has some of the best meat. The cheeks are delish. Try it just once to see if you like it. You never know what you could be missing. Cheers.

Wonderful dish. However, does not seem appropiate for city people who are not used to take the spines out themselves. It could even be dangerous.

lalos i totally agree with you. Im following Gennaro since his first video came out... there is really not much variation when it comes to ingredients. i still watch his videos since i like him very much...

lalos but remember that most Italian chefs cook with those main ingredients, if you looking for something different then go watch indian recipes or chinese. and remember it's not just the ingredients that count it's also how you prepare the dish that can make a big difference in taste.

why mess with great ingredients and im positive you couldn't cook anywhere as close to Gennaro!
