Blanching Sweet Corn with the Spike Brewing Solo Basket

It's that time of year where Illinois sweet corn is ready to eat and to preserve for eating later. I bought a whole sack (50 ears) this time and didn't want to do it in batches on my stove, so I pulled out some of my home brewing equipment (a 20 gallon Spike Solo System and a 20 Gal Spike Brewing Kettle) and blanched it all at once in my garage.
Now I have another year supply of blanched vacuum sealed corn in my freezer.

Use a canning funnel to fill bags. Bunch the bag seal area up around the funnel, fill bag, remove funnel and the seal area stays clean of any liquid of corn bits. I do the same when sealing anything liquid(I have a chamber sealer, I can seal a bag of water ! Handy for travel ice blocks!)

Looks great Larry. I don't have the vacuum sealer. I just use zippy bags. I like the Solo basket. I have to use other means. I use a lag bolt in my cordless drill. Drill it into the base of the cob, then I run it through a stripper to get the kernels off. Makes easy work of stripping the cob. The end result is the same. Great Video buddy. Cheers.

You could make one very easily. I process quite a bit, but if you only process a little, I see why it would just be easier to cut it.

Hope after you shaved the kernels off that you ran the edge of the knife down the cob to get the kernel hearts out. That's the best part.
Are you planning to make some beer with corn added?

Not with this corn. This is my 2022-2023 supply of sweet corn for meals.
