I worked for an Indian subsidiary company in Houston for several years. All of our management came from the Mumbai facility and lived in 2 or 3 houses all side-by-side, a couple of which brought their wives. They and their wives would make tons of great Indian food and bring it to work with them so I got to try a lot of different stuff which was great. It was definitely a unique experience, especially when they did their annual company feast where they brought in Hindu priests to bless the CNC machines and the facility. Plus, we got to introduce them to some amazing Texas barbecue (obviously not any beef lol)

It's not unique to Hindus to take blessings of the Priests and also decorating the new Equipment when it's used for the first time. It's the culture of the land.

I am an Indian but live outside India and I do get food poisoning when I eat street food in India, this is because my gut is just not used to some of the bacteria. However those who eat street food on a regular basis are immune to it. India is magical and full of surprises. You never get what you expected to get or came for. You always get something different, but more interesting and magical. Sonny's food adventures remind me of this quote: "There are three trips you take to India: the one you think you’re going to have - that you plan for; the one you actually have; and the one you live through once you go back home.” - Erin Reese. Sonny was expecting a salad crepe, and he ended up getting a dosa cone dipped in a mesmerizing and mysterious mash. The same with that dessert. The result is always more than the sum of its parts.

Food ordering apps like uber eats, swiggy and zomato restricted us at home instead of going out and explore different options at different shops. Paranthe wali Gali and roller kulfi is way too common. Remember when we use to go out with our Mother for once in a month shopping and the last thing was eating gol gappa at 1 place and proper meal at other and ending the shopping with ice cream.

They're different things, since tortilla are wheat/corn flat breads. But Dosas are kind of like a crêpe since it's made of a batter of fermented rice and lentils. The cheese part of the dish are more similar, though the cheeses taste very different. I love both of them though!
