Bison Taco
Ingredients:
2 lbs ground Bison
1 can black beans
1 small onion diced
1 can of green chilies
1/2 cup of cilantro minced
1/2 cup of medium salsa
large 12 0z bag of shredded montery jack cheese
bagged corn tortillas
Instructions:
Brown Bison with onions and drain. Mix in green chilis, salsa, black beans and cilatro simmer for 10 minutes spray second frying pan with cooking spray and lightly cook tortillas on each side until softened fill tacos with meat mixture, top with cheese top with tomato, more onion, sour cream, guacomole if desired.
Teriyaki Bison Burgers
Ingredients:
1 lb of ground bison
1 tsp of garlic powder or minced garlic or wet garlic
1/4 of a small onion or dried minced onions
1 egg
Bread Crumbs
1 tblsp of "The Best Teriyaki Sauce You'll Ever Taste"
Instructions:
mix all ingredients together in a bowl and form hamburger patties. Grill to rare or medium rare. Enjoy.

Okay, STOP. You are committing several cardinal sins of burger making, right there. 10:03 - ALWAYS toast your buns before putting the patty. This stops sauces from sogging them up, one, and prevents them from tasting like dry sponge when you eat the burger. 10:16 - Adds cheese "before the burger cools down", and then proceeds to put a cold slice of tomato on it, thus defeating the purpose of the heat of the burger melting it at all. You add cheese to the burger BEFORE you take it out of the pan/grill. The cheese is not only going to melt, but melt around the burger, infusing it with flavour. 11:18 - THAT BURGER IS STILL RAW! You can still see the grain on the muscle tissue. That should have been a HUGE warning sign that you haven't cooked the bloody thing properly. And I do mean 'bloody', the thing is RED, not pink on the inside as you claim. Also, it has EGG in it. No wonder you got several bouts of salmonella poisoning! Was this a how NOT to make a burger video?

I saw a gif of this and thought it was some sick joke, I actually laughed. I searched and searched and finally found the raw hamburger video, but to my surprise he sounds serious.

I bought bison literally to try and see if it needed to be rare or not, cooked it to medium, used similar ingredients (no jelly-like teriyaki sauce tho) and there was zero toughness, I think that was totally bs and he just ate a raw burger for no reason. Highly recommend bison burgers, but for all things holy, not like this.

You clearly didn't preheat your pan for the burger. It wasn't even cooked
Raw meat and soggy bun , as little seasoning as possible, now, that's FOOD
This is like Henry's Kitchen except I think Jack is serious.

You shouldn't eat ground meat raw correct but if he had a bison filet he could've just seared it and had it this raw........Definitely not with ground bison, unless you like pathogens.

I'm sorry to break it to you but rare has nothing to do with how it's looking, in fact, rare is a measurement of internal temperature. Rare would suggest an internal temperature of 52-55 °C (125-130 °F) while Raw would at it's most be room temperature which is at around 20 °C (68 °F)
Before it cools down.... It never warmed up!
Just a few tips on medium rare burgers: I use roughly 1/3 lb. without binders. With binders, you might consider ~1/4 lb. I go for a brown or dark brown exterior. (Not burnt black or under-seared grey). A thermometer to check for 130F-140F internal temp is useful. Don't touch it to the pan, of course. Checking the bottom is pretty useful if you're not sure of the sear. Because of the high temp sear I use, I find that avocado oil is a good choice. Never use olive oil, butter or other low-temp oils. Grey internal means I've over-cooked it. Dark pink means I've under-cooked it. Things like humidity, ambient temp and which side of rare or medium rare you want to lean toward make this a variable art and not a cut and dry science. Because of this, you'll notice I don't give an exact internal temp, an exact sear or an exact poundage. But 1/2 lb. (binders or not), is too much, imo. If I'm in the mood for 2 1/3lb burgers, I just make 2 of them.

@highrider61 I do a lot of answering of questions here so I figured I would save time on the show and stick to the food. many people just wanted to see my cooking and didn't care about viewer mail. I still make sure I communicate with all.
@Eaglezero6205 rare is okay if I make sure to reach a certain temperature. You can order buffalo from the Crown Blue Bison website. Check the internet. Steak is a better cut of bison so it's probably more than ground bison.

quick question is it healthy to have the meat a little pink on either meat you cook
i thought since it was ground, aren't you supposed to cook it all the way through so there's no salmonella?
@icedragon295 more tender and moist. less dry and crumbly. I love rare. Try medium rare and you'll be fine. You'll never change. medium rare is literally a small think pink line through the middle of the cooked burger. probably about 15 minutes on medium flame for a fat burger. 10 min for a medium burger and 5 min for a thin burger.
