In the movie, you can also see Joy add in a few dashes of Chinkiang vinegar (Chinese black rice vinegar) which I highly recommend - it also helps cut some of the oiliness and saltiness. I can spot the bottle from a mile away, one of my favorites and a staple in my family's kitchen! I remember seeing this scene and FREAKING OUT that you can see them using this specific vinegar. It lived next to the stove in my mom's kitchen along with salt, chicken bullion powder, white pepper, soy sauce, and peanut oil.

it lives in my kitchen, too! very distinctive bottle and label. balsamic is never a substitute for real Chinese black vinegar, IMO.

Thank you for referencing Chef Wang’s recipe for scallion oil noodles. He’s arguably the best chef for Chinese cuisine here on KZread and I wish a lot more people saw his scrumptious creations.
That's a much more fiddly way of doing the hand pulled noodles than the folks at the noodle shops I used to go to when I lived in China used. They'd slice off a chunk of dough, roll it into a cylinder, stretch, fold, stretch, fold, etc until they had a bunch of noodles. No-one ever sliced and made each noodle individually. They'd make a decently wide range of noodle types simply by how they held their fingers when stretching the noodles out and by how many times they stretched and folded.

Depends on what kind of noodles you're making! The noodles Babish is making seems to be some kind of Biang biang noodles, where you whack and stretch the dough cut into individual noodles.
Note, this works great with all kinds of Italian pasta shapes too. The aldente adds another touch of greatness. Also, MSG is missing for those who need it.

There's always msg in the soy, when in dounle just add other aromatics like a clove of garlic or a pinch chilli flakes would work wonders

A friend advised me that oyster sauce works if you can’t get dark soy sauce. Can confirm it is delicious and has that umami you want.

Michelle Yeah did absolutely nothing to deserve the award. Every other category; supporting cast, screenplay, directing, yes absolutely. But best lead actress? Her performance was hardly anything to scoff at. And Jamie Lee Curtis snubbing Basset and Hsu, that's another let down.

@@malagrug4326Two tips: First, if you're using spaghetti, add a little baking soda to the pasta water (a tsp or two per liter will do). It infuses some of the alkaline nature of proper ramen noodles into the spaghetti. Second, Japanese soy sauce is close enough to Chinese light soy sauce you can use it as a substitute and likely never notice the difference.

I've been making these for about 2 months now and I cannot recommend them highly enough! And the fact they're so extremely simple to make too is perfect for someone in college like me if you want a quick yet super delicious meal

Definitely worth. Just make sure that if you have leftovers, air tight container and must eat within 2 days. Noodles be porous and hold onto bacteria easily.

Note from China: the 拉麵 cooks just roll out the dough ball into a snake and do the pull-and-fold with that. No slicing necessary. The I pulled ends *do* get cut off though.

It’s also insanely hard to master, so I can forgive Andrew for taking a shortcut here.
One of my favorite variations of this is adding dried tomatoes and some cut nori for additional funk. Amazing recipe.

Unfortunately, unless you were raised on movies that weren't mainstream Hollywood like myself and most other white kids, you likely also missed out on his work until Kung-fu Panda. I'm glad he's finally getting the recognition he deserves! The lack of inclusion in mainstream media is criminal.
it's amazing how simple this recipe is! and frusterating that I NEVER would have thought of something like this! Onions (of any kind), Alliums (optional)(of any kind), noodles, soy sauce, sugar, fresh garnish. DONE. WOW. I have all of these things in my kitchen almost all of the time. never would have thought of this!
My disappointment that the video didn't end with Andy somehow having made an everything bagel is immeasurable.

Hey Andrew! I've been re-reading Calvin and Hobbes recently and I've always been curious about Calvin's favorite cereal: Chocolate Frosted Sugar Bombs. I needed this, growing up in China, this is an extremely nostalgic dish that brings me comfort and familiarity everytime I try it.
Rewatched this last night. Today I realized it was scallion noodles she was making and came on to find this gem.
Simple, yet appetizing. As a man living in an Asian Household, I’m gonna try making these once I get the chance. 👍
Wow, that's close to the German version. In Germany we need garlic and/or onions instead of spring onions; instead of oil we work with butter. And instead of soy sauce we use liquid Maggi seasoning. But not so much. A tablespoonful of Maggi is more than enough. Sometimes we leave out the garlic and onions if we want it to go very quickly. It's absolutely fantastic.

I love udon noodles in frozen dinners but I never actually boiled them myself before, but I've been wanting to. I just bought a package of them and until now I wasn't sure what I was going to do with it. I think this is the first Binging With Babish recipe I'm actually going to make. (But obviously, I'm going to skip making the noodles from scratch, though.)

KZread commenters trying to think of an original joke:
If you use the typical Chinese technique of leaving the top of the scallion greens as a garnish, you can easily chop everything at once. Just use a few extra scallions at the start and save the tops when you dump the white parts into the oil. Saves on effort, tastes better since the whites have more flavor, looks better since you get more vibrant green in the garnish, and saves time since you chop everything in one whack.
Instead of lao mien, for next time I'd suggest using just white rice noodles. They are very slim and give off a smooth slurping experience, and because they are so simple and don't have flavor, the sauce adheres more and you get a nice dining experience altogether between the savory, aromatic sauce and the smooth slurping

Made the Babish version. Needed salt but the addition of fried onions, shallots at the end 😙chef kiss*. Added a touch of Taiwanese black vinegar and it made it taste like Worcestershire flavor. I used lo mein noodles bc I had no wheat noodles. I would use less oil next time. Otherwise, I would make this again ❤
Started making these after picking up the Wok by J Kenji Lopez-Alt, and it's pretty much a weekly staple. It gets better the more you eat and it's so easy!
A dish that's simple enough that I won't feel completely overwhelmed after making pasta by hand. Yay!
Scallion noodles is my go to quick easy meal. No matter how hard the day, it's nice and easy and makes you feel better. If you crisp up the noods, even better.

Honestly, the 15 minutes of kneading is far more complicated. The hand pulling is the best part, aside from eating them of course.
I'm definitely gonna try both of these (minus the noods from scratch part💀)

I would probably adjust the ratio of noodles and sauce for myself (more noodles or less sauce), but it looks pretty nice. 🙂👍🏼

It’s certainly not the only movie that has made me cry… but it is my favorite as well.
They are better if you drain the scallions after cooked and used the oil to fry the noodles until they get colour, add soy sauce + seseme oil to give further colour and flavour and then add the cooked and fresh scallions.

True, and the triple fried egg butty with chili sauce and chutney from Red Dwarf is sitting there ready to be made. It's a state of art sandwich.
I would love to see you try and make the menu from The Menu (with the.. less horrific parts about the Menu)!

What a great receipe
I tried making my own variation of this and I must say, a ton of chillis, some chicken and some parsley really make this dish excellent. I've made it multiple times for me and my mom and she loves it.
