Bhuna Khichuri Recipe-A very special niramish dry khichuri for Lokkhi pujo

Bhuna khichuri is possibly thamma's (my grandmother Durga) most acclaimed recipes, even more than the labra'r torkari this bhuna khichuri was served with. This was made once a year on the day of Lokkhi pujo to offer to the goddess of prosperity. Thamma always made two kinds of khichuri on Lokkhi pujo-this one, as well as the runnier, less decadent version. Bhuna khichuri, at least thamma's version that we have grown up eating, is in may ways more opulent than a polao, and shares many qualities with a good polao. The grains of rice and dal should be unbroken, fully cooked, but each grain should be separate. They should glisten with ghee and be lightly spiced. Naturally, she used a lot of ghee-about one and a half times more than her mishti polao even. For me and my cousins, (and lots of relatives and friends in the neighbours) thamma's bhuna khichuri was one of the highlights of the year. It is a recipe very close to my heart.

Plzzz share kfc style fried chicken recipe...I have tried a lot of recipes everything was good but the coating doesn't stick to the chicken...you will bite it &the whole coating comes out of the chicken

I am from Kerala and somehow came across your channel. Started making many of your recipes at home. All the recipes that I tried came out really really amazing. তোমাদের ভোগের খিচুড়ির রেসিপিটা আমার বাড়িতে সবার এতো ভালো লেগেছে যে প্রায় প্রতি দুসপ্তাহ অন্তর ওটা বানাতে হচ্ছে। এখন আমার মাও তোমাদের নতুন রান্নার রেসিপি এলেই ট্রাই করে। এটাও বানাব খুব শিগগির। খুব ভালো থেকো। আগাম শুভ লক্ষীপুজোর শুভেচ্ছা পাঠিয়ে দিলাম।

I want to acknowledge the fact that i learned most of the bengali dishes specially vegeterian dishes from ur channel more than my mother during my stay in kolkata 2017... even though i donot exactly copy the dishes bt take the basic concept from ur recipes

I think it's the drying that made all the difference. The prep time for washing and drying seemed like ages at the time but now, after eating the khichuri, seems to have been totally worthwhile.
