I just watched this video, I happened to open a Japanese food shop, and started selling takoyaki and then ramen, about 1 year ago I only cut noodles manually by hand, as I learned and developed my knowledge increased, and now I use an automatic noodle machine like the one above. In use, this video reminds me of my long journey of learning to make ramen. thank you for making a good video. keep up the good work friend.

Is there a benefit to using the kitchenaid for mixing over the food processor? It seems like the food processor would work the same for both low and high hydration. I'm curious because I only have a food processor and will be working with higher hydration doughs.
On the ramen noodle calculator there is a protein portion. Should I be adding protein via vital wheat gluten for those numbers?
So I'm looking at buying this noodle machine but the one on Amazon only has a 3mm noodle cutter. Where did you get the smaller knife/cutter?
