    Your Kada is good for gas stove. For induction stove your Kadai bottom of 9 inch diameter to Touch induction coil heat. Less diameter heat goes on surface of Kadai bottom. Aluminium pots develop Alzheimer ie memory loss. For Chapati also soft iron with micro pores can be developed. Or Manglore roof tiles clay can be used for Tawa as well Kadai. Canada

    Very important point to keep in mind with cast iron - not to cook acidic foods like tomatoes, lemon, tamarind, curd etc. So the choice of curries that can be cooked in cast iron is limited.

    I have pure iron kadai. I cook all types of sabjis in that. Even sabjis having tomato. It really works good. Even if you use tomato in iron kadai, don't keep it for long time. Once sabji is done, immediately take it out from kadai. Rinse and wipe the kadai and then put some vegetable oil and grease the kadai from inside and outside.

    Mitti ke bartan sabse best hai pichle 11 saal se hum use kar rahe hai alumunium hum ne band kar diya dosa ke liye non stick pan use karte the ab cast iron pan use karte hai........stainless steel me bhi nickel hota hai its not good......always go for Mitti ke bartan clay pots itna hard nahi hai maintain karna baadme aadat ban jaati hai its easy after some use..........only buy from reputed place...

    Indian food usually includes tomatoes. In that case cast iron will definitely get corroded which could prove hazardous for health. In Stainless food gets stuck and burnt, non stick is not good. So what kadhai to select.

    One has to get used to bringing the Nadia to the right temperature in order to make it almost non stick.A good temp would 160-170 degrees . There are there ways to avoid food getting stuck or burnt.
