Claire's ease on-camera suggests to me that she has done a spot of modelling. Interesting Thailand's nick is "The land of smiles". In come countries if you smile at people who you do not know, you are thought to be a bit "mad" as in ... crazy! Thai food is so complex in terms of how many different tastes its dishes can contain. I absolutely love it, excepting possibly eating guts and offal.
