These look yummy. We love quesadillas! Lately we have been using pepper jack cheese to add a little 'heat' to them.

Add some bell peppers with the onion 👌🏻

I saw the video yesterday and made Beef Quesadillas today. It tasted as great as it looked. I made a big salad with it....really good combination as a full meal dinner. I have left over salad and beef, so we will eat the same dish tomorrow again. Normally I don't eat much salad in the cold season but with the beef tortilla I truly enjoyed my salad. I will do this combination now regularly.

Very similar to my recipe. I use Mexican oregano in mine, it makes a difference. Yum!
