    Thanks. That stone is actually a Tojiro 4K, but the Shaptons are nice too.

    When you sharpen, make sure you remove steel evenly along the entire length of the edge to maintain the same blade shape. Obviously that assumes your blade is a good shape to begin with. Also, pull through style sharpeners are notorious for causing recurves like this because most of them are unable to reach the back part of the blade to sharpen it.
