Either one of the anysharp pull throughs...OR like a lot of chefs do, incorrect use of sharpening steels/rods. So many times i've seen chefs just sharpen 3/4 of the edge... smh

it looks like someone just doesnt know how to use a sharpening stone becasue the side of the knife is scratched up

Thinning is key, and it’s great that you do that without being asked. Some people only reprofile then sharpen and you’re left with something that wedges and not slices.

I always see that recurve with cooks/chefs that (try) sharpen their own knives, but it's usually back toward the heel a little more.

Do you think the belt grinder takes the temper out of the steel?

Not if you use it properly. High end knife makers use belt grinders all the time.

Yeah if you go crazy with a grinder you can mess up the temper. The sharpening guy knows what he’s doing so there is no chance he would mess up the temper. If you are a newbie you should probably just stick to doing everything by hand to avoid getting too much heat buildup.

Global knives are overrated, over priced and uncomfortable to use for long periods of time in my opinion, Victoriknox all the way.
