Me too! It drives me crazy when they leave half the ingredients in the bowl, on the beaters, on the spoons. A ridiculous waste of food.

Yeah, made this today as it spurned a long ago delight I recalled as a child in the 70's. This was "Creamosa!" and delicious. Easy to make but since it was 'happy hour', I screwed up a little by adding the wine before the flour and butter. I realized this mistake right away, put my highball down, and got to work to rescue this delicious looking dish from the past. I can conclude that even though I screwed up a little with ingredient sequence, it still turned out "Creamosa!" and tenderly delicious! I have been following and cooking the 'Pasquale Sciarappa' religion for several years now. Cardinal Sciarappa's culinary divinity never let's me down. I'm sure to live a long happy life because this man fills my soul every night with delicious food and hearty laughter. What more could you ask for. Pasquale! YOU DAH MAN!!!! THANK YOU! THANK YOU! THANK YOU! Your dishes give me reason to love life! God Bless you for sharing your knowledge of joy and sustenance with the millions like me who always had to dine out for the amazing cuisine we loved instead of discovering the joy and satisfaction of making it ourself in our own home. I love stroganoff. My grandmother was polish. As a kid, I was super picky and stroganoff was one of the things i liked. This looks delicious! 😋

When I first tried Sam's Choice pappardelle egg noodles I fell in love with them. One of my favorite dishes was pot roast stroganoff. The tenderness of the braised meat, mushrooms, long flat egg noodles, sour cream, and Pinot Grigio sure made my taste buds dance. It will be good to watch this Italian chef treat us to his recipe for beef stroganoff.
When I was a child my father would make a raw beef tartar. We would go to the polish butcher on Manhattan Ave in Greenpoint and get the beef. I remember he put cut up pickles, egg yolk, onion, garlic, Maggi and put it on a piece of fresh rye bread and enjoy it. Seeing you eat that little piece of raw meat brought back that memory. Have you ever heard of any recipe like that or have one similar? I'd love to see it. Thank you for sharing your beautiful food.

This is still commonly eaten in Europe, especially Germany I think. I am 55 I have heard of people a few years older than me having this at cocktail parties when younger here in Tennessee. I have seen it in many cookbooks from the 1960s back. It should be easy to find.

I grew up on steak tartar in Poland. My Gram and Father would patiently hand chop the beef and all yhe goodies that go with. The best ever with one of our chickens eggs (yolk only) cracked on top. I am in the process of having a meltdown right now. I miss my family so much. ALL are gone. Cooking for one is not the same. Even though I am Polish, this Chef/Cook being Italian, is cooking right up there with my family roots. Love him and his recipes. Can anyone in Philadelphia, Pa, recommend a trustworthy butcher for fresh and safe meat so that I can make good steak tartar? Will never use supermarket meat for the tartar.

If you're making burgers or anything with ground beef and you season it, eating a small piece raw gives you a little sneak peek as to what it'll taste like when it's cooked.
I wish I could have eaten at his restaurant while he was still working.🥂

My mother is 100% polish and father 75% scicilian. This is a much healthier version of my my mothers beef stoggenoff that I'm willing to try. U put such a smile on my face w the recipes u share! This was my great grandmothers way of teaching and she did it w such love and care as u 💕

The food looks delicious ... In Western New York State to buy this Pappardelle Pasta made in a dried form in a one pound box you have to go to Wegmans grocery store and pay $3.69. Whoohoo Ka ching then we got to go to the raw meat section to cry some more.

Pasquale, thank your wife for the Stroganoff recipe. I love Stroganoff but my Cardiologist does not. This recipe is lighter on the butter and fat and no heavy cream. For me, a little more oil, a little less butter...also the Pappardelle contain less cholesterall than Egg Noodles. I get the sour cream, no arguments!

My mother made this dish exactly like this and she would add just a Tablespoon of tomato paste! It transcends the final taste!

I make this exact recipe a few times every fall/winter. The only things different with mine are I use venison back strap and add a little bit of thyme to the mix. Excellent!!
