Beef Cheek Tacos
Last summer I had the opportunity to teach a weekend class with Matt Pittman at his Meat Church www.meatchurch.com/ headquarters and that is when I was turned on to Beef Cheek Tacos. Matt describes this awesome creation as a traditional Mexican breakfast delicacy and it did not disappoint!
The beef cheek is incredibly tender and full of flavor. It’s marbled with fat and has a richness like no other cut of beef. He gave me the run down on how to prepare them, and I had to try it for myself back at the house.
I found Beef Cheeks at my local Sams Club. They were sold in a 6lb cryovac package for about $20.
First off, you absolutely need to trim them. Beef Cheeks are surrounded by thick fat and sinew, and it will not render during cooking. Take the time to get rid of all of this, and what’s left is intensely marbled pieces of meat that will remind you of really good brisket point or short rib.
For the seasoning I used a combo of my Grande Gringo bit.ly/GrandeGringo and my Killer Hogs Hot Rub bit.ly/TheHotRub . Season the outside liberally and get them in some smoke. I ran my Gateway Drum at 275 with pecan wood chunks for flavor.
After 2 hours the cheeks had a nice bark; at this point it’s time to really break them down.
Place all the cheeks in a large aluminum pan and toss in some thinly sliced onion and garlic cloves. Add beef broth to the pan for moisture and a good dose of your favorite Mexican hot sauce. You can add anything you like to the braising liquid but I just kept it simple.
Cover the pan with aluminum foil and place it back in the pit. I did use a wired probe thermometer to monitor the internal temperature. You want to cook these until they’re falling apart so it’s about 210 internal. Just stick the probe into one of the larger pieces of beef cheek before covering with foil.
Remove the pan from the pit and vent the steam. Rest the cheeks for 30 minutes then shred by hand. I highly recommend using nitrile gloves with a pair of cotton liners underneath. It will still be pretty hot. I explain my glove setup here: bit.ly/BBQGlove
To build the tacos I warmed corn tortillas and finely chopped white onion and cilantro. Each tortilla gets a pile of cheek meat, onion, cilantro, grated cotija cheese, and a drizzle of the braising liquid. These tacos are simple and that’s the beauty of it. The beef cheek meat is tender, juicy, and super rich in flavor. I guarantee you will love them!!
Beef Cheek Tacos Recipe
- 6lbs Beef Cheeks Trimmed
- 1/4 cup Grande Gringo Mexican Seasoning bit.ly/GrandeGringo
- 2 TBS Killer Hogs Hot Rub bit.ly/TheHotRub
- 1 Onion thinly sliced
- 10 Cloves Garlic peeled
- 3 cups Beef Stock
- 1/4 cup Mexican Style Hot Sauce
For the tacos:
- 1 dozen corn tortilla shells
- 1 small white onion finely chopped
- 1 bunch Cilantro chopped
- 1/2 cup Grated Cotija Cheese
Directions:
1. Prepare Drum smoker for indirect cooking at 275 degrees. Add Pecan wood chunks to hot coals for smoke flavor.
2. Season trimmed beef cheeks with Grande Gringo seasoning and Hot Rub
3. Place Beef Cheeks on pit and smoke for 2 hours.
4. Remove beef cheeks from out and place in aluminum pan. Add onion, garlic, beef broth, and hot sauce.
5. Insert wired probe thermometer into one of beef cheeks; cover pan with aluminum foil; return to pit until internal temperature reaches 210 degrees.
6. Rest the beef cheeks for at least 30 minutes and shred by hand. Drizzle with liquid from pan for moisture as needed.
To build tacos: warm corn tortillas on grill or stove top. Place shredded beef cheek on tortilla and top with finely chopped onion, cilantro, and cotija cheese. Dress with a drizzle of braising liquid and serve.

You can throw this in a slow cooker for 8-12 hours with onion, garlic and bay leaves. Then make some tacos, with onion, cilantro and salsa. OMG!!!

My father and i will cook a whole hog almost every year and put on a big cookout for family, friends or the neighborhood. When its done and ready for picking i always go straight for the cheek meat. The reactions from city friends always tends to be priceless when i go after the pigs face to get at that meat. Jaws dropped but i always ask them don't knock it till you try it.

Malcom just saw this recipe and cannot wait to try. A variation I will do is a homemade salsa and turn the aju into a cosume with pieces of the meat with garbanzos topped with onions and cilantro. Loving your recipes here in Texas.

I am in Texas and the nearby Walmart had a bunch of beef cheeks! They were kinda in the Mexican section with tripe and other similar cuts that most Americans won't cook or don't know how to cook! I didn't buy them, yet, but I will before I leave town! Dang I love your drum smoker / pit! A lot smaller than some and not too complicated. Doesn't look heavy so not too bad to bring home or move!

The Mexican name for this dish is barbacoa, barbacoa is a slow cocking of the beef and the name is a derivation of American word barbecue. Traditional the slow cocking in Mexico is dig a hole in the ground and put a fire with wood, later put the meat with pencas (agave leaves) to protect the meat from the fire and later close the hole and it’s going to be slow cocking. People think that is a traditional Mexican dish but is a derivation of the American technique is slow cocking, the only difference Mexicans use cheeks and tongue. This technique of cheek tacos looks amazing, I’m going to try to replicate. Greetings from Monterrey, Mexico!
I got introduce to beef cheek when I started working in Austin. If you ever come here check out a place called Leroy and Luis. Beef cheek is always on the menu. They serve it as Barbacoa or sliced like a brisket. It’s AMAZING🔥
I tried these from a street vender in Colorado Springs, once. Very good. Can't wait to cook them myself.

Cheek tacos = tacos de cachete. Most often they're 'tacos de cabeza' or beef head tacos. There you can choose what part of the head you want the tacos made of: cheek, tongue, eye, brain, mixed, etc

I don’t watch cooking videos on YT so not sure how it popped up in recommended vids. Anyhow this dude is just scratching the surface, we Mexicans have been eating the weird parts of the cow for centuries. Menudo (tripe), pata (hoofs), cachete (cheek), lengua (tongue), cabeza (head) and it’s all marvelous. Good on you for trying cheek my man. It’s clear you have a passion for what you do keep living the dream!

I live in deep south Texas and they are very popular down here. We call it “barbacoa” and its a mexican tradition to buy it on sunday mornings and have yourself some badass barbacoa tacos. Looks like you did a hell of a job with that cheek meat.

I made beef cheek steaks a few mo's ago. Cooked them to med rare and treated them like a London Broil cut. Turned out fantastic!
Beef Cheeks is one of the most underrated cuts of meat that don't get enough love.

Barbacoa! I never thought of smoking the cheeks! My family has always braised it in the oven or made it in the crockpot! I made some on Monday. Next time we’ll have to try making it in the smoker!!

Put a very small pat of butter in a pan and crisp those corn tortillas up just a little and that makes a world of difference too! Cant wait to make these this weekend
