Beef Blade
The blade is from the shoulder area of the steer. It is prepared by following the natural seam between the ribs and the scapular bone. It is made up of several muscles which have layers of fat and connective tissue within them. Blade is a versatile cut that can be pan-fried/grilled, cut into strips and stir-fried, roasted or diced for braising. There are two blades per carcase.

Awesome knife skills!!
Thank you very much. For one ignorant of most of what you are doing, the vocabulary, anatomy,etc., the next time you record, remember how disoriented people like I am. Turn, rotate, flip, and very soon, I lost track of which end is which, what is up/down/right/left, etc. I wish there was a way to keep the disorientation away. Perhaps, an inserted box in the ccorner with some type of XYZ tracker or maybe marking sticks in the meat (X is red, Y is blue, Z is green), or the camera is attached to the meat, or some other way to stop flipping, turning, rotating, to the point of my dizzyness. Great job, really amazing knife skills. Thank you.
