I feel like I’m relaxing in the Spa but watching delicious food being prepared.

Yes, I loved the quiet, peaceful music, the sound of the birds, and the deliberate, mindful, almost meditative way they were cutting the fruits and stirring the pots. Very relaxing and a gorgeous dessert that I plan on trying for myself.

This type of cake is always spectacular and such a tasty treat. I did one in shades of lilac and white for a birthday cake with purple fruits. But I only used agar agar. What are the benefits of using both jelly crystals and agar agar?

@@palipali4264 funny you should mention photos. I planned to remake that cake this weekend but now it seems we can't get agar in Australia. Best I can get now is Guar Gum which I've never had as much success with.

@@palipali4264 yes gelatin is too soft. The shape was a star so I used a square tray and cut it diagonally into long diamond shapes then put them together to form the star. It's important to have those beautiful clean cuts so the pieces go together seamlessly. Also is a need to work at room temp and have the pieces hold well. Only agar can achieve that result. The coconut cream is far heavier than fruit juice so the jelly needs to be strong. I used white as my base colour and added blueberry, mulberry and dragonfruit juice for the various pastel coloured layers. Then did artwork on the top using those leftover colours as 'paints' along with some pieces of raw fruit. Yes my mother appreciated it for her 80th birthday.
