BBQ Chicken on a Charcoal Grill

BBQ Chicken on a Charcoal Grill!
Total Prep time: 20 min
Total Cooking Time: 35 - 45 minutes
Ingredients:
Many chicken drums, fresh
Oil
Salt
Pepper
Garlic
BBQ Sauce
Directions (using lump charcoal):
Light Charcoal Chimney (let burn for 10-15 min)
Place all chicken in a bowl pour oil and spices (salt pepper garlic) over chicken. Mix
Set up grill for indirect cooking
Sear chicken over direct heat for approx 5 minutes flipping attentively until all wings have a slight char
Move to indirect heat
Add small amount of smoking chips
Cover and cook 10 min with top vent 75% open, grill should heat up to about 450+
Open and lightly baste with BBQ sauce, then flip and baste other side
Add small amount of smoking chips (can omit)
Close lid and cook another 10 min, grill should heat up to about 400
Open and lightly baste, then flip and baste other side
Close lid and cook another 10 min grill should heat up to about 350
Check chicken with thermometer, if 165 degrees you can pull chicken
If not, lightly baste, then flip and baste other side
Close lid and cook another 5-10 min
Notes for next time:
Very good and very moist!
Searing then indirect heat with basting really mellows out the char nicely
Cooking fast and hot with indirect is very effective, meat maintained moisture and cooked thoroughly
Use gloves when mixing the chicken
I would mix less salt with the oil, maybe add more pepper
Use the above instructions to add 2 bastes and be done sooner.
The unbasted chicken was delicious too! Will definitely experiment with some rubs
Place tinfoil underneath chicken in lower grate to catch drippings.

Yep always use a chimney and always fill it up, sometimes 75% new, then top it off with leftover charcoal.

I've been basting and searing at the end, which of course means I've had problems with the skin/bbq sauce getting burned to a crisp. I'm going to give your method a try (searing first, basting over indirect heat at the end). I prefer my bbq sauce to be a little crispy which is why I sear it at the end, but it's just burning too much. Looking forward to trying your method.

Wouldn’t full open on top cool it down, and full open on bottom heat it up. So close the bottom more to cool it down??

From my experience there's many ways to do it, just need to restrict the airflow somehow
You really need to cover the grill when it flares up buddy , you dont need to keep moving the drums around just a tip

They type of charcoal matters a lot, Even brands make a difference. I use Royal Oak or B&B lump. Also a chimney starter, and finally having the lid on helps the coals last longer too!

Per FDA, "Do not rinse raw meat and poultry before cooking. Washing these foods makes it more likely for bacteria to spread to areas around the sink and countertops"
