Suzie has the nicest personality. One can't help but like her.
When I was in the Bass club my partner and I fished tournaments all over TX and we ate At many BBQ place all over Texas. We would go out of way to go to this one and on the way back home we would stop at it again, He is 82 and I'm 72 now would love to go there now. We did this for 20 years until our health got the best of us. Thanks for bring back old times to me. I remember it when you walked in the door, nothing has change.
What a fantastic interview. Preserving history and personalities through stories and food. Great job Suzie.
The best episode in the history of Hey Grill Hey! I’ve made the pilgrimage to Blacks from Arizona and it’s wonderful to see the people behind the great restaurant. Loved spending time with the patriarch. Thank you.
Awesome video. I live in North Texas and that is a Texas icon. Thank you
Beans will always be my go to side for BBQ!
First heard tell of bumbing the beans. But makes since.💓 Great interview with such a lovely and graceful lady Norma Jean.😊
Thanks to both of you. Will be adding this to my cooking!
This was the absolute sweetest video ❤
I went here years ago when I lived in TX. Absolutely AMAZING BBQ! Id say the best in TX after traveling all over the state.
This was awesome! Thank you for sharing this!
Interesting and inspiring video. I live in Denver and this is a place where Mexican restaurants are on every corner competing with each other but that don't seem to encourage chefs and owners to be authentic or unusual. Every single time I try a different restaurant I order something with red chili and something with green chili and I just have to say, the sauces are exactly the same in every restaurant. Mild chili, pork and onion chunks all in a cornstarch thickened dribble...it's annoying so to see someone make something from scratch and nailing it every time is an inspiration.
Awesome, great interview and experience!
I’m from Iowa, and I love that place! So fun to go there
I see a road trip to Lockhart Texas in my future. Awesome video!
Wow, just wow. That was very special. thanks for bringing that to all of us.
What an awesome place! GREAT VIDEO
GREAT video, loved every second of it and of course of Norma Jean Black
I am so glad someone went to lockhart! All we hear about is franklins and goldies. There is no better bbq in the country than you can get in lockhart and im from central Kansas. 😊

Check out the video description!
great video!
Also if you want a quality offset smoker Lockhart is the place to get a Mill Scale smoker.
What a cool story.
I've had the beans at Terry Black's in Austin, and they were phenomenal. I don't know if this is the same recipe.
Black's is an institution in Central Texas, but I have to be honest when I say that Terry Black's has left Kent Black's Original Black's BBQ in the dust.
What is sweet story
Hey Suzie, thrilled to see you here in God's country. I always thought you belonged here.
Great video. Love the beans and bbq.. But I think she still held out on you. Lol. I don't think she told you all the ingredients.

I got the typed recipe directly from the family, but I would get a good chuckle if they still kept a few secrets back.

Salt pork is just like bacon. It looks like bacon. But it's not cured like bacon. Both are from pork belly and cured with salt. But bacon gets smoked in smoker. Salt pork is not. And salt pork generally has more fat..it's widely used to flavor dishes. I grew eating it. I'm German. And we always called it side pork.
Blacks is where the tourists go. Smitty's BBQ is where the locals go. Way better!
Love Blacks BBQ! Please do an episode breaking down the recipe to where you think it's the same. A copycat recipe if you will.

@@Heygrillhey so sorry!!! I rarely read the video descriptions. 😆 Thank you so much!
Recipe says "help break some of the beans' skins / “Bumb the beans”. Didn't Norma Jean say 'Bump' the beans? Make them bump into each other. I wonder what the reddy brown spice was closest to the camera, smoked paprika? Great interview, what a wonderful place.

@@Heygrillhey Yes, I copied it, reformatted it, and saved it to MS Word to try it, but it looks to dark for Paprika.
It’s not a BBQ without beans!
👍👍😃🔥🐖😋
Im going to keep bugging you until you do it.... Buck Board Bacon. th money saver.
Love the video... however grandma in the video said she cooked the beans all night long but in the recipe description it says cook 2 to 3 hours... 😢 ..??

We adapted the recipe slightly for the home cook. The 8 hour soak is overnight and then the 2-3 hours is on the stovetop. The results are the same! They need to do the lower temp overnight cook in the restaurant to be prepared for lunch service.
Wow. I can't believe you went and made a video about beans. Beans don't make bbq. It's just a side dish that every bbq joint has and all made different. And you didn't find any secret

Wow. I can’t believe you went and made a comment about beans. Beans don’t make great comments. Glad we both wasted our time here. 😅
Black’s in Lockhart is good. Black’s in San Marcos is awful.
Beans should be dark, looks like crap beans
Been there
