This chewy, flavorful flatbread flour glaze topped with two kinds of seeds perfectly accompanies any meal. Higher-protein unbleached bread flour and lots of water in the dough give the bread a wonderfully light texture.
It is widely known as Persian flatbread in the United States and Canada.
Ingredients:
32 oz flour
22 oz water
½ oz salt
½ oz sugar
½ oz olive oil
sesame seeds
For glaze:
2 tsp yeast
2 tsp baking soda or flour
4 oz water

@@ChefKooroushShearan درود عمو کوروش مهربان بله اتفاقا فردای همون روز عسل خوب تهیه کردم وبازرد چوبه ترکیب کردم هر روز ناشتا میخورم.البته رفتم بیمارستان عکس گرفتم وگفتن که به پاهات زیاد فشار آوردی بخاطر کار سنگین که اینم از عوارض زندگی در ترکیه هست.

خود من هم همین مشکل رو داشتم. بدون اغراق گفتن هر روز چندید وچند کیلومتر در رستوران راه میرفتم. دیگه طوری شده بود که, صبها از خواب که بیدار میشدم فکر میکردم که به اندازه ای من رو با چوب و چماق زدن که از خواب پریدم. ههمیشه تمام بدنم کوفته و خسته بود. این معجون کلی بهم کمک کرد

سلام شف ، سوال من این بود که خمیر چه مدتی باید زده شود مدت زیاد نان را سفت ومدت کم خمیر را ساگی میکنه

@@mehdialavi1529 مهدی جان درود بر شما شما خمیر رو به مدتی ورز بدید که به حالت یکدست در بیاد و در اون تکهای آرد نباشه اگه از همزن برقی استفاده میکنید زمانی که خمیرتون خودش کاسه رو تمیز کرد و دیگه به کاسه نچسبید یعنی حاظر شده اگر شما در آمریکا هستید شماره تلفن من (971)270-0070 هست و میتونی که زنگ بزنی

Not all the ovens are the same But it should take around 15 to 20 minutes

Hello Lura, Sorry for the late reply. If you look at the title, I would say Barbari Bread Recipe. Barbari is the name of this Iranian bread. At the same time, after welcoming everyone, I mentioned what I would make, and I mentioned one of the most beloved and famous Iranian Breads: barbari.
How long do you knead the dough?

Sure, that would be perfect. I use to serve that in my restaurant Piattino in Portland and it was a big hit. I usually use three kinds of lentils and some diced vegetables like; carrots, celery, onions and garlic and some spices. Than cook them in chicken broth.
