    Okay: question for you, Chef Tom: I want to put these skewers on the smoker first, then crisp up on the grill afterwards. How long should I smoke them? It’s a Weber Smokey Mountain Cooker, so it runs at 250F. I’m thinking something like an 60 to 90 minutes on the smoker, then basically seared on the grill. Or, do you not recommend smoking them? Curious to know your thoughts

    id like to see a homemade smokey ketchup as a base for other homemade bbq sauce maybe smoked tomatoes smoked garlic a homemade rub with dehydrated smoked vegs etc

    I was going to ask the same thing. With the chunks that big, I see no need to skewer them. Only difference was he only had to flip 3 skewers instead of 5-6 pieces. Once he sliced them up, the skewers became unimportant. Still looks like an amazing and healthy recipe and a great twist on tri-tip.
