how to cut Tri Tip steak
Cutting your meat in the right direction can make ALL the difference between a tender bite, and one that's as chewy as old rubber boots. So it's pretty darn important to know how to slice and cut properly.
Tri Tip is one of the trickiest steak cuts to master slicing - a single muscle with a grain that shifts. Here's my method for finding the grain on a tri tip, and the correct way to slice it.

    After watching 6 or 7 videos that left me uncertain on where to make the cuts, I finally found this one that explains and shows how to identify the grain. I love that she showed it on the raw and cooked piece of meat, and the picture with the grain and cut lines was really helpful. This is a new website for me, but I intend to check back often. Thanks for the tips.

    When you tugged on the meat, it showed the greatest visual explanation for chewing tenderness. Simple but effective. Of course I don't always have a piece of meat in my hands when trying to explain this to people. Maybe I should 😆 🥩

    Sooooo glad I watched this. You made cutting a steak make sense. I'll be using this method to cut a tri tip before cooking. I'll marinate half in A-1 sauce, and the second half in teriyaki sauce for 24 hrs, and then grill them. They are incredible!!!

    great video Jess! I drew a very similar diagram on my dry erase board at work to explain this to my cooks. Tri tip is one of my favorite cuts of beef but it can be confusing to those unfamiliar with the grain of the meat. In the future I'll send my cooks to this video! -also send me some Lone Star beer in Kansas, its hard to find here :)

    I always wondered about this and you answered this question very well. Thank you. With that said, there’s a BBQ place I go to and they have really good TRITIP; however, it seems like the last 3 or 4 times I went there, their TRITIP has been a lot more chewy. Now that I saw this video, I am convinced that they are cutting along the grain and not against it.

    Watching this explanation has crystalized a practical plan. Even ground beef has a certain amount of chewiness, according to the fiber sizes. For someone who has trouble chewing, the fiber size needs to be very fine, akin to something like a hotdog. Most people appreciate a certain amount of chewiness, but for those with Temporomandibular joint dysfunction (TMD, TMJD) to participate in a carnivore diet, they may need to use some specialized strategies.     The best part about tri-tip is you get some short cuts and some longer cuts as well as medium and rare cuts. 805 Santa Maria at its best!

    Do I hear a bit of an Australian accent there?..Ha, i knew it. You look like a U.S Texan but every once in a while your pronunciation of certain words gives it away! I just decided to check your page. Good 👍 explanation. We love the tri tip roasts. I grind dry rosemary, course salt, granulated garlic and black pepper, rub it in and let set overnight then smoke to 118 internal , and sear on a cast iron. wrap with smoked wagu fat and sit for about 15 mins. Its so good it going to replace our prime rib Christmas dinner.

    Good tutorial...cutting a tri tip correctly or incorrectly could mean an edible or inedible piece of meat. I like mine cut much thinner though
