Baked Macaroni and Cheese

www.southernfrugal.com The old fashion way of making macaroni and cheese. Here's the recipe I forgot to show on the video.
8 oz Elbow macaroni
3 tablespoons butter
3 tablespoons all-purpose flour
2/3 cup of non-fat dry milk
2 cups water
2 squirts of Dijon mustard
16 oz. sharp cheddar cheese
salt to taste
Bake 325 degrees for 30-45 minutes until lightly browned on top.
This is a very easy to make dish.

    When you shred the cheese yourself, you know what's in it - CHEESE! The pre-shredded bags of cheese have extras you probably don't want.

    So true! It melts much better, too. I was horrified once when we had guests at dinner and the cheese on top of a dish didn't melt at all - it just sort of "crisped." So embarrassing!

    They usually add cellulose and/or potato starch as an anti-caking agent and to add like extra fiber and something else. Cellulose can be derived from things like wood pulp. Yuck. And, that is so true. Pre-shredded cheese does not melt well probably due to this.

    ricki c ok no need to be dramatic. They add corn starch so they cheese doesn't stick together which is not so bad for taco night, however if you are making a cheese sauce it is not so great because it thickens the sauce way too much. It helps when you read the ingredients list.

    Vincenza8907, most commercial brands, even high-end ones, have cellulose (not corn starch) to prevent caking. It's not dramatic to not want wood pulp (cheapest source of cellulose fiber) in your shredded cheese.

    Made your old fashioned mac and cheese. I had a little ham and asparagus that I added to it. It was enough for 4 meals. It was very good thank you.

    Ms. Phyllis, I love your cooking and your way of showing us how to make those recipes of yours. You don't do those impossible to do recipes and you use simple ingredients. Thanks for all the great recipes, I baked one of your spinach pies just the other day and it was out of this world girlfriend! I'd much rather watch and learn from you than some of them fancy chef folks, who have pots and pans with their names on them!

    This is the same way my grandmother and my mother made it and how I have made it for decades, except we were all farmers and used fresh cream or milk and some flour. No eggs in ours. This way is so delicious! Thank you for your videos and I am trying to figure out how I have missed this particular video until just now!     This is almost exactly the same as my grandmother's recipe, except she used breadcrumbs toasted on top, and she added an ingredient that I have never known anyone else to use, but it is wonderful with the dijon mustard and sharp cheddar: curry powder; about a teaspoon full. It is a family favorite and part of every holiday meal for us. Best to you!

    I make almost the same Mac and cheese. I do not use mustard. But, I put in grated yellow onion. I also sprinkle paprika on top. Sometimes I change the pasta. I have to use wheat or ancient grain pasta. I enjoy your videos. The recipes remind me of my grandmother, my mother and the weekend dinners we had together. Thank you for sharing with us.

    I cook this all the time but I use a can of carnation evaporated milk instead.. I know what you mean about whole milk; it tends to separate from the fat and goes chunky.. but carnation milk adds a wonderful rich flavor and never separates... I say this for those who abhor the flavor of powdered milk like me lol

    For a very creamy mac & cheese, I use half sharp cheddar and half Monterey Jack because some Monterey Jack melts really well. This recipe looks awesome. I will try it.

    I boil my macaroni with a little pinch of chilli powder or one fresh chilli. It does not make the dish hot, just a little bit of piquancy. Love your videos. Very talented woman and a joy to watch x

    I really liked your recipe it's very similar to mine. The one thing I do differently is I go to the deli and ask for cheese ends. They sell the cheese ends pretty cheap. But also I really like the flavor of the different cheeses. It changes every time. I like the different flavors.

    Our recipes are about the same, and have to say this is the best recipe, have never tried it with the powdered milk but will in the next batch. I add 2 tbs of dried minced onion to mine. Perfect recipes for a Sunday dinner when the kids come over. I serve ham and broccoli on the side with it, is so good.

    Looks delish. I make mine with evaporated milk and eggs... then I add sharp cheddar and smoked Gouda cheeses... with a panko buttery crumb topping. My family fave and go to comfort food!🧀

    Have you ever made your sauce in the vitamix? I just throw whole milk, butter and flour turbo, 2-3 mins then mix it in cooked macaroni and bake it. You can also add onions, mustard, green chilies. It thickens upon standing...anyhow I love your videos. I have two ice cream machines I'm getting rid of thanks to your vitamix creativity! Thanks for making easy, great real meals with awesome tips.

    Hi Mrs. Phyllis.. I just discovered your channel and I must say I am addicted to watching your videos. The main reason is you and your voice reminds me of my beloved late grandmother from NC. I’ve never really cooked “real meals” before, however I have decided to start and I have learned a lot from your videos. Thank you for that. I know you don’t use it in this video but I am so confused on the difference between baking powder and baking soda and how to know when to use each. Again thank you for your videos.     Best to Google this for a better explanation than I can give. If you are following a recipe it should tell you which to use, often a cake recipe will call for both. Sometimes a biscuit recipe will also call for both.

    I've never made a baked macaroni & cheese before. My grandma was from the south & always made her mac & cheese on the stove top & so that's how I learned how to make it. However, this looks very good & I'm going to give it a try! Thanks for the recipe.

    This is great. I'm gonna try to make potatoes so gratin with this. I have to make the packaged type Mac and cheese for my family. I would try and add extra real cheese and mustard too. They only like it plain. But this recipe sounds good. Will let you know if it's a winner here

    Already grated cheese has preservatives to keep it from molding and wax that’s why it doesn’t melt as well, buy a block bring it home grate it then freeze it, taste way better and creamier. Sure miss mrs. Phylis but I’ll always come to her to find a recipe I’m wanting, she cooks like family.

    I also add cut up cherry tomatoes and frozen or blanched broccoli to the mixture before putting in the oven , for color and added nutrients. And my little two year old grandson gets some veggies that way.

    So I heard, the bags of pre shredded has potatoes starch in it to keep it from sticking together. Plus other stuff I can't pronounce. That's what I've heard. We love macaroni and cheese. Looks good. Thanks.

    I am so over Stouffer's (sp?) mac and cheese and so glad to have your recipe. I think they changed their recipe or maybe they're using cheaper ingredients. Anyway I have a question Phyllis. Do you undercook the macaroni since it'll continue cooking in the oven?

    I cook the macaroni according to package directions, yes it will cook a little more in the oven. I like the macaroni more soft so it works for me. You could under cook it if you like more firm pasta.

    Pre shredded cheese or "grated cheese" as it's called here in the UK can have an odd texture....I always use Mature Cheddar and grate the block.

    Yes, often that is because of "anti clumping agents" usually cornstarch and the like, they throw off the flavor and texture.

    Hi Phyllis, I love your channel and I love that you make so much from scratch. Maybe you have answered this in the past, I'm sorry if you have, but I was wondering your take on things such as artificial sweetener, packaged foods, or anything with lots of ingredients. Do you buy those kind of foods or do you do everything with real ingredients, including real sugar, real butter, real flours not coconut. I struggle with the quality of foods nowadays.     Carrie, I try my best to use very simple no additive ingredients in everything I make.I have never used artificial sweetener - to me they leave a bitter after taste. Mr. Bucky does use Splenda in his morning coffee.

    I only rinse pasta when using it for a pasta salad, I never rinse when using it for something hot like in this video.

    Ms Phyllis, why do you use the powdered milk with water instead of nonfat milk in a carton? Did I miss that explanation? I see comments where others used evaporated milk. Is powdered milk plus water a different taste or consistency than cow milk in a carton? Looks delish!

    Powder milk and evaporated milk will not get funny in a recipe if the heat is too high.

    in my aunts recipe for baked macaroni and cheese, she uses broccoli cauliflour and cottage cheese. now I understand that that might sound odd but I would not believe the difference it makes to the creaminess and the texture of the dish.

    was 12 when my mom died, living with my father and brother, I would have to cook during the week day,I used to make macaroni and cheese with a side of mashed potatoes lol I thought it went together,on Fridays we would eat out and dad cooked week ends, four days a week was all they could take of my cooking, I graduated whit honorable mention for my cooking skills , little did they know it was an necessity

    Thanks Sharon, I was born and raised for the first 14 years of my life in Newport News, Virginia. All my relatives were in North Carolina, which we visited often - so I guess I have sort of a combination of both Va., and N. C. We now live in South Carolina so I may have picked up a little accent here also.
