Pasta Salad
This is a make-ahead dish which gets better after cooling in the refrigerator.
Here are the ingredients I used:
8 ounces of multi-colored Rotini pasta
4 cups fresh kale broken into small pieces (no stalks)
1 cup multi-colored bell peppers, chopped
1/2 teaspoon salt in cooking water
6 hard boiled eggs, mashed
1 cup chopped fresh tomato
2-3 tablespoons apple cider vinegar
6 tablespoons mayonnaise

You are a wonderful teacher and every time I watch your videos I learn something new, for example mashing the eggs with the metal potato masher. I used to slice mine with the little egg slicer, then cut them across with a knife and they never looked as nice as yours. You are a joy to watch and again I thank you. I believe that you truly have a ministry for all of us who watch. Good morning Phyllis! I have cooked for over 60 years myself and I do so many things the exact same way as you. I realize one of the reasons I love watching your videos so much is that I never had a grandmother and my mother was wheelchair bound all my life so I never had the joy of watching one of them prepare a meal so I have the joy of watching you. I was the tail end of 9 babies my mother had and she was not crippled when the others were small and they tell me that she was a wonderful cook. Thank you for sharing with us all the cooking and baking wisdom that you learned from your mother and grandmother as well as the wisdom you have learned on your own. May you be blessed with many more wonderful years!
Oh, how delicious this was, Phyllis! I prepared it for my sis and brother, following your instructions. It was refrigerated overnight. It made a wonderful dinner, served with sliced cucumbers.

Thank you for the pasta recipe. I like the healthy ingredients in it. This would be so good to have to bring to lunch at work, quick dinner, or to a potluck.
Miss Phyllis, I was taught a neat thing from an Amish lady neighbor when growing up on the farm. If you put a wooden spoon in the pan you are boiling anything in it will not boil over. How I loved walking across the gravel road to watch Anna make or bake anything, and she could whip up fried apple (or any fruit)pies in no time flat. This was in mid 50's. A special treat was to take a ride in a buggy! Great memories. At the time little Amish children went to the same one room school house as the rest of us farm kids went to. There were quite a few little school houses scattered around back then. These Amish were the old sect. The newer group there now are a bit more modern.females wear dresses now in light dusty green etc, and themed above ankle. The older sect there when I was growing up eventually moved back to Ohio, Indiana or Pennsylvania. Anna's son who was my little brothers playmate come back not too long ago and hunted up my brother. I thought that was a sweet thing to do. Anyway, the wooden spoon really works.😍

Several others mentioned the wooden spoon trick to prevent boil overs and I have been using it religiously ever since, no more boil overs. Thanks.

Have you ever tried sweet Amish macaroni salad? It's basically the same dressing, except you add more salt, sugar and fresh minced onion. No kale, but celery is added instead... Yeah, I remember, it was chopped egg, tomatoes, minced onion, celery, sweet gherkins, vinegar, Hellman's mayo, salt, pepper, and sugar. And you're absolutely right about it being better the next day. Your recipes bring back memories and inspire me to recreate recipes from my childhood. Meals that I'd never think to make, if not for you. Thank you. I'm going to try your buttermilk pie for Thanksgiving dinner this year.
Thank you for sharing. It's good to be able to see/hear/ someone that's down to earth and uses common sense. You cook the way I was taught as a young person. So many good memories!

Hello Miss Phyllis, glad to see you're cooking something good. Here in the Northeast we usually only have macaroni salad during the summer. I think I'll break tradition and make this right in the middle of the winter. It looks so good.

Thoroughly enjoy the videos!! Frequent viewer!! A complete meal, all in one, never thought about putting a leafy veggie in.Looks so nutritious!! I am 63 & cook pretty good, but enjoy hearing someone else's recipes & watching your techniques preparing food. A shake of salt in water prevents eggs from cracking. Rinse w/ cold water to bring down egg temp, then smack & roll on a paper towel or paper plate & shell slides right off.

I write down your recipes and made your 1950's Brownies they were delicious, my grand daughter loved them and I made your Always Tender Pepper Steak that was delicious too! I have an egg allergy. I suppose I could leave the eggs out and add something else. I always add sweet onions to my salads. The onion gives it a fresh kick. Especially after a day or two. I love your channel. I've learned so much from you. My mother didn't teach me how to cook but I am learning through your video's and recipes. No more tv dinners in this house. I can't thank you enough.
I could not find the video where you show how to boil eggs. But let me tell you. I tried your method today with the 15 minutes, cracking in the pot, and peeling under room temp water. Oh my gosh, changed my life! The shells slid off the eggs almost effortlessly. You have no idea how many times I have had a miserable time peeling eggs. Thank you Miss Phyllis!

I'm making pasta salad tomorrow but mine is completely different from yours. The next time I make egg salad, I'm using the potato masher to make it. Great idea. Phyllis may be gone but we'll always follow her recipes as they are so good. RIP Phyllis and know that we miss you.

Wow I have never seen anyone use a potato masher for boiled eggs!! You just made my life so much easier. I'd rather use the potato masher instead of me usually dragging out the food processor or sometimes I use a fork to mash them. Yeah I know I've been doing it all wrong!! Haha! I love cold pasta salads just about any which way you can fix them. So yummy & we love them so much that we'll have them even when it's cold outside bc we can't wait till it gets hot! LOL. New subscriber here!!
So good to see you again. I was concerned about you and Mr. Bucky and I see from other comments that I wasn't the only one. I love Pasta Salad and this looks so good. I know you've been busy with the RV, but again, I am so glad to see all is well.
This is a family favorite in the summer! We never boil any veggies though...just chunk em up fresh and chop eggs up pretty chunky as well! Also add mayo, Parmasean, black olives, bacon bits and shredded cheese. Also good with ranch or part ranch part mayo! Love it!! And for a change, replace pasta with chopped cauliflower! Cauliflower salad is great summertime salad and family fav also!
