Baked lamb

Today we are going to make a simple recipe that will become a dish worthy of the most demanding guests you may have.
This is a variation of one of the best known recipes of the Catalan cuisine: "El pollo rustido" where we have added some truffles that give it an intense and special touch.
If there is one thing this recipe requires, it is patience: patience when poaching the onion and patience when cooking the chicken over low heat and for the time it needs until it almost falls apart when you touch it. That is the ideal cooking point, although otherwise, it is not more complicated.
Do not skimp on the onion. It is better to have too much than too little. This will give the dish the essential flavor and texture it requires.
The chicken should be free-range. Although these chickens usually have tougher meat, this cooking method makes it tender and juicy. Try it and you will see.
The cooking time that I indicate is totally orientative because it depends on the chicken, the type of fire and the casserole in which you do it. Just cook it over low heat until it is very tender and it will be perfect.
If you cannot have access to this type of chicken, with the typical supermarket chicken you will get a spectacular result.
The truffles, depending on their size, you can put 2, 3 or even 4. In this video I used 4 because they were very small. The important thing is the proportion, no matter the size.
As for the wine, the rancio wine is a type of wine very used in the Catalan cuisine that gives a characteristic flavor to its dishes. But in case you do not have it at hand, you can perfectly use brandy. The flavor will change a little, but the result will also be very good.
Traditionally, this dish is made in an earthenware casserole, but since I have an induction hob, I use an enameled cast iron casserole. The result is very similar, as both distribute the heat well. If you do not have this type of casserole, you can obviously use the one you have at hand, but if they are thin, like the stainless steel ones, you will have to be more attentive during the cooking since it can.
