关在家久了,开始想念吃点心了,今天来试做包子。蒸好的包子,肥肥还留明显折子纹路,凉了也不塌且有弹性QQ,口感很有嚼劲,松软拉丝,加上里面满满的少甜白莲蓉馅料。热乎乎的好好吃。
After staying at home MCO for awhile, I began to miss Dimsum, I will try to make Pao Steamed buns today. Pao that just steamed, looks fat yet still have obvious folds marks, even after cool down, their structure didn’t collapsed and but with nice QQ elasticity. The texture is very chewy, soft with string pull, plus inside is loaded with less sweet white lotus filling. Steamy and delicious.

♦食谱
=16颗包子 (面团 50克/份)=
250克 温水 (40-45C)
5克 速溶酵母
5克白糖
500克 中筋面粉
50克 白糖
3克 盐
20克 植物油
640克 白莲蓉馅 (35-40克/份)
(凉水上锅,大火直水沸腾,再蒸10-15分钟)
♦Recipe
=16pcs Pau (Dough 50g/portion)=
250g Warm Water (40-45C)
5g Instant Dry Yeast
5g White Sugar
500g All Purpose Flour
50g White Sugar
3g Salt
20g Vegetable Oil
640g White Lotus Fillings (35-40g/portion)
(Tap Water in steamer, High Heat till water boil, Steam another 10-15minutes)

Welcome, pls send photo.after making. Yaya u can reduce by the amount of the egg yolk, but if u are good at wrapping u wana wrap more also can

Tks for your prompt reply. I have not tried making pao so maybe will try to make half the quantity first, so I will just reduce everything that u stated by half right? Will start making when I can find lotus paste. Tks once again!

不好意思我的广东话不太好。我大概理解一些。酵母不用回温也没关系,不过要用温水测试,需要可以发气泡活跃才能用噢。 蒸的方法要更影片一抹一样噢。包子整形后要开着发酵让包子上面形成一层皮,之后蒸,蒸好不可以立刻开盖,要放5分钟,再开,不然包子会塌

Hi, I tried your recipe but it’s not fluffy. The bun is not as thick as yours , so I don’t see any fluffiness . Pls advise why is it become hard after its cool. Thanks

Dough need to be kneaded till smooth and correct, or else it will be hard.also when making n shaping, make sure to cover the remaining to prevent dry. Steam also need to follow exactly to prevent them from undercooked, yield hard buns
