Hi Leah. I’m curious about the cheese and specifically how you cover it. I also buy the bulk loaves from azure. I cut them into 3-5 pieces and vac seal each piece until I need it. I’m thinking after watching you I’m in definite overkill. How long is it taking you to work through the big loaf and are you covering like you showed that whole time? I’m thinking a loaf takes me about a month but I am cutting or shredding off it almost daily. Thanks.

Hi there! It takes us 3-4 weeks. The trick is it has to be something you reach for regularly. We’re always cutting a chunk off and exposing a “fresh end” and covering that with beeswax. Once we didn’t cook for a week and the end started to harden a bit. But yes, we do this beeswax method and then if I’m shredding cheese, I always do a lot extra and store that in a ziploc :)
