Authentic Nandos Hot Sauce Recipe!

Тәжірибелік нұсқаулар және стиль

This is the PERFECT Nandos Hot Sauce recipe...and you can spice it up to whatever heat level you like! As tasty as the original Nandos hot sauce is, you are going to love this replica Nandos Hot Sauce!
Piri Piri chicken is traditionally a Portuguese dish, but Nandos is an International restaurant that originated in South Africa.
** I have been getting questions about the use of citric acid because I already use lemons in this recipe. Citric acid doesn't really have a flavour, if I used more lemons then I am adding more lemon flavour. The citric acid is adding more acid to the sauce without the extra lemon flavour...to help this sauce be safer (more acidic = more shelf stable) **
I tested the sauce with a pH meter and it came out at 4.4 so it should be shelf-stable. Test it yourself to be sure, and make sure you keep things clean during prep and cooking. I would keep it in the fridge once you start using it though!
Ingredients:
30-40 Piri Piri Peppers (you can use other birds eye, or Super Chilli)
6 Cayenne Peppers
4 Ring of Fire Peppers
1 Large White Onion
5 Cloves of garlic
1 Large Lemon (or 2 small lemons)
1/2 TBSP Salt
2 TBSP Vinegar (distilled white preferably)
1 TBSP Dried Rosemary
2 TBSP Vegetable Oil
1/2 TSP Citric Acid (optional) - geni.us/citricacid
(If you want to reduce the spice to around the Medium heat Nandos sauce, use 10 Piri Piri peppers and 1 Ring of Fire pepper.)
Blend all the ingredients together and simmer for 10-15 minutes
Ninja Blender (I love this thing!): geni.us/nutrininjablend
Squeezy Bottles: Amazon UK - amzn.to/2QYSt4d
Citric Acid: geni.us/youngscitricacid

What for to use citric acid if you use lemon juice ? I think that’s the same. Greetings from Poznan.

Citric acid doesn't have flavour....so if you add more lemon then you are adding more lemon flavour. Which isn't a bad thing if you want it to have more lemon flavour. Like I said in the video you don't have to add citric acid, I just wanted less lemon taste in this sauce.

  • @ChilliChump

Also the citric acid makes the sauce more acidic so the sauce will be safer from bad bacteria and botulism etc. You could use more lemons or vinegar to make it more acidic but this will change the flavour.

Thank you for your answer. By the way, I would like to ask you whether you were wondering what optimal density should a spicy sauce have ?

  • @ChilliChump

    @ChilliChump

    5 жыл бұрын

That really depends on the sauce! I like a few different consistencies and densities. The salsa, chunky type sauces are good....but I also like the consistency of thinner vinegar based sauses too like Cholula, Frank's or Tabasco sauce. Or when I make a pure fermented pepper sauce, that has its own density/consistency too depending on the type of pepper. You could even use the brine after a fermentation which is almost the same consistency as water!

Northeast USA here. I grew up in SA (1964 till 1984) and love peri peri sauce. I have been making my own for some time here now. I cannot get piri piri's though. I have to use Thai Bird's eye instead. One thing I have been doing different, is I have been roasting everything before blending it. Not sure if that is better or worse. Or the same. One thing i know, I much prefer it to Nandos now. I have one bottle, and always compare. Peri Peri chicken is one of my favorites. I also made Peri Peri chicken livers just the other day. Fantastic. Locals here think i am a crazy African haha. But I have converted a few to our tastes. My wife and her family loves my Durban curry, and everyone loves biltong.

@@selinasnowdon2834 Did you mean to say 'Amazon Canada'?I prefer to use fresh chilies in this but dried would work well also I think. To tell you the truth, I had access to fresh piri piri's when I lived in Africa, and I see no difference between them and Thai Bird's eye chilies. At least not enough so anyone would know the difference in a peri peri sauce. But one day i may try dried piri prir's. Thank you.

Thank you for the recipe! Mine was absolutely awesome! I went along with only cayenne (since that’s what I’m growing) It burned well in the throat 😂 but I wondered, how long does it last? I did mine yesterday and it is in the refrigerator now. Thanks a lot 🙏🏻🌷🔥

+Chillichump Nando's does indeed come from SA. In fact I know the man who started it with his son, Fernando. He lives in a suburb in Hillcrest near Pinetown, huge house! . I worked for Nando's Hillcrest for a few years. We had it quite good then, were allowed a staff meal each day, added lot's of Nando's sauce of course, although, was a bit of a chilli novice back then! I'm not crazy about Nando's sauces and they're too pricey! Much prefer your homemade sauce. Greetings from Kzn, South coast.

Must be a universal echo. Just got this video in my feed yesterday. Had just bought some random hot sauce on clearance at my store that same night because it was made with piri piri peppers, and it was the last bottle. I remember thinking it was too bad I couldn't buy more than one. Forgot all about it until I saw the bottle of Nando's in the video. "That looks familiar...." Turns out that knowing I'll never be able to buy it again at the local supermarket won't be a problem. Just have to make my own!

Long time subscriber, first time commenter! I really appreciate the quality of your videos and step-by-step recipes! For this particular sauce, when you do the cook, are you holding it at a particular temperature for any particular duration to pasteurize the sauce? Or is it mostly pH / salinity that is doing the work? Thank you, and I look forward to your future videos!

Hi Fred...no particular heat, just get it to a simmer...this would mean that it is at or around 100'C. This is mostly to "cook" the sauce as well as reduce it a little. The acidity is meant to help with the preservation and safety of the sauce. However for added safety you can cook the sauce at a higher heat for about 10 minutes for added safety

You have something in your hair :P Great videos, got me interested in growing my own. Just waiting on a few varieties of seeds that I ordered to arrive. Hoping it's not too late in the season for planting here in Aus, but pretty sure it should be ok. Do your chilli plants die because of the cold or is it better to start with new plants each season? I used to have some birdseyes and one other unknown chilli plant at my old house and they lived all year round for a few years. They only grew about half a metre tall though, but that may be due to neglect lol. Just wondering what sort of blender you were using too? Looks like a nice size for what I was after :)

I had already messed up the first recording of this video...so when I started editing and saw I had something in my hair in the second take...I wasn't going to do a THIRD recording! 😄 Yeah unfortunately the weather in the UK means that the plants will die if left outside...chilli plants can't handle frost and will die if the roots experience any freezing temperatures. You can overwinter the indoors or in a heated greenhouse, but it is easy enough to start them from seed again each year if you follow some basic principles (I did a beginners guide on growing chillis which goes into all this: bit.ly/seedtosauce ). The blender is brilliant, it is a Ninja (Nutri Ninja). I got it recently to replace an older one I had which didn't work as well.

Awesome. Tried this recipe a few minute ago. In fact the source is still cooling down. Just awesome. I made the Jamie Oliver's recipe recently. It's also good but is sweet. This one is more sour/acid. I prefer this one.👍👍👍

Lekker man lekker. Loved your presentation. Did my own variant based on the Mosambic Peri Peri sauce. Lasted 3 years after dishing out litters of it to family and friends. This year I will be propagating Jalepinos as well as Habanero and some birdeye chilli's. You got me.
