    I LOVE Sichuan peppercorns, especially when they're toasted. They have an almost citrus-like brightness and aroma. This dish used to be intimidating, but you've shown how simple it can be!

    For those who dont cook with alcohol, apple juice is good substitute for chinese rice wine. Its does the same. Although Chinese rice wine is used in many dishes you cant tell the difference to be honest. Especially when there are a lot of strong flavours involved.

    I love you so much Aaron, the way you talk & your personality. I love ALL your food videos. I made two of your noodles recipes & kimchi fried rice. They all turned out SO GOOD. I LOVE kimchi fried rice & now i don’t have to drive 45 minutes to this one place to get it. It’s even better than that place. Please don’t go anywhere Aaron

    I would like to point out that asian seasame seed pasted is made with toasted seasame seeds while tahini is normally it is made with raw hulled sesame seeds and there is a large flavour difference. My local thai market has canned Pigeon Fermented Mustard Green 140g and they are pretty good, but we preffer Leng Heng Seasoning Pickled Green Mustard with chilli, NOT from amazon uk they cost X3 the price of elsewhere online.

    I lived in Sichuan for about a year and fell in love with the food there. Now, that I've left Asia, I can't go a week without some Sichuan food and dandan noodles is definitely the dish I most often cook.

    Just a regular vegetable oil without a strong taste would do! (no sesame oil or extra-virgin olive oil!)😊

    IMHO it helps to have a Chinese name to some harder to find items, like 碎米芽菜 (preserved mustard greens). Nice recipe!

    Hi Aaron. I love watching you cook and am anxious to try some of the simple dishes. Here in the US, some 'Chinese' buffet's serve peanut butter chicken. The sauce is like a creamy peanut butter served with slices of fried chicken. I want to replicate the sauce. Can you help? Many Blessings!

    I can't tell you how great it is to live in an American city with such great international markets. All I had to do was just look and go. In places where English is not the language people are eager to help me learn and get what I want and need. I just wish Korean pears were cheaper LOL!

    DanDan Mien is probably my favorite noodle! I prefer a bit less liquid in the sauce but that's just my preference :)

    Aaron, you are not supposed to use the little black seeds that come with the Sichuan peppercorns. They are bitter. The outer reddish wrappers are what you use. This recipe looks great! I will try it.

Thanks for your nice cooking videos :D I love noodle dishes :3 I was wondering what kind of rice noodle would be best for this, I can't have gluten so I can't use regular noodles here (God I miss udon noodles so much xD).     I've only tried to make dandan noodles in places where some proper ingredients were scarce, so there was definitely some finding good substitutes involved. But it always came out pretty close. There's actually two kinds of dandan noodles, this Szechuan version (which is my favorite) and the Hong Kong version which is more like a soup, really (not my favorite, the balance is way out of whack and the broth washes out the creamy sauce).
