Atlantic Beach Pie -- A North Carolina Favorite

Atlantic Beach Pie is a lemon pie with a saltine cracker crust. It was created by Bill Smith and served at Crook's Corner Restaurant in Chapel Hill, NC. This pie is great in the summer or anytime of year.
Atlantic Beach Pie
1 and a half sleeves of saltine crackers
3 tablespoons sugar
1 stick of butter softened
4 egg yolks
1 14 oz can sweetened condensed milk
1/2 cup lemon juice (you can use lime juice is you like)
Zest of one lemon (optional)
Whipped cream
Preheat oven to 350 degrees.
Crumble crackers by hand. Add the sugar and combine. Using your hands, mix the butter with the crackers until the butter is fully combined and the cracker mixture can hold together. Spread in a 9 inch pie plate. Refrigerate the crust for 15 minutes then place in the oven for 15-18 minutes, until the crust is golden.
While the crust is cooling, whisk together the egg yolks, sweetened condensed milk, and lemon juice. Pour the mixture into the crust and bake in the oven for 15-18 minutes until the crust is set.
Remove from oven and allow to cool completely. Place in the refrigerator (preferably overnight) to get cold. Before serving, top with whipped cream.

My favorite pie. I make this several times a year for the family and a few lucky friends, but most people have never heard of it before! One change I made to the recipe is to add about a cup of sour cream, it adds a delightful tang. Everything else is the same. Oh, and I've lived in Raleigh for the past 20+ years...

I'm from north Carolina and had this pie, it's perfect. I grew up about 40 miles east of Raleigh. This pie makes me homesick 😢. I live out west for about 49 years now. Thanks for the recipe and sweet memories of Carolina. ❤

I've lived in NC for most of my life and I had never heard of it until my wife's friend told her about it.
Im from NC and have heard of this pie. So glad this video showed up. I definitely want to try it. Looks amazing.

I have not. I read the creator was going to use Ritz but he didn’t have any so he used saltines.

The salt in the butter did not make it too salty for my taste. I you wanted to use unsalted, I'm sure it would be fine.

@@cynthiaamitrano8915 It should be fine. But, the salt in the crackers does help balance out the sweet. Maybe add a bit of salt to the crust or use Ritz crackers. They're not as salty.

I’m sure it would be good. Use key lime juice and you’ll have a great key lime pie.

For making a crust that will be cooked, just wash your hands well first. Whenever I do use gloves (usually when handling raw meat), I put the gloves on and then wash my gloved hands with soap and water, rinsing well, to make sure the GLOVES are clean enough to handle the food. That's "proper" enough hygiene.

I thought I was going to see a new pie but it wasn't. I guess you can call it "Atlantic Beach Pie" if you want but in reality, it's just a plain ol lemon Pie, and I don't care what kind kind of crust you make, it's still a Lemon Pie.
