- How to make cylindrical puff pastry - A - Water: 50g
A - Water: 50 g
A - Milk: 50g
A - Butter: 40g
A - Granulated sugar: 3g
A - Pinch of salt
A - Flour: 60g
3 whole eggs (100g or less)
[Preparation]
Sift the flour in advance.
Put the ingredients in A in a saucepan and bring to a boil.
Turn off the heat and stir in the flour until there are no lumps.
Bake the dough until a thin film forms on the bottom of the pan.
5. Transfer the puff pastry dough to a bowl.
6. Mix in the beaten egg.
7. Make good use of a mesh baking sheet, a selcrum, a tart stone, etc. by referring to the video.
8. Drizzle the puff pastry with water and preheat the oven to 210℃ and bake at 180℃ for 50 minutes. After baking, leave the oven door unopened for 10 minutes.
- Chocolate cream
Dark chocolate: 120g
Fresh cream 36%: 180g
Milk: 90g
Gelatin: 2g
[Preparation]
Soak the gelatin plate in cold water for 20 minutes.
Melt the chocolate.
Boil milk and allow it to cool to 60°C. Add gelatin and allow it to dissolve.
Boil the milk and pour it into the chocolate mixture three times to emulsify it.
Add the cream, mix well with a vermic mixer, transfer to a container and wrap tightly.
Refrigerate for at least 8 hours.
7. Whip in ice water
- Vanilla white chocolate cream
Gelatin sheet: 1.8g
Fresh cream 36%: 160g
White chocolate: 40g
Granulated sugar: 10g
1/2 vanilla pod: 1/2 pod
[Preparation]
Soak the gelatin in cold water for 20 minutes.
Melt the white chocolate.
Add the vanilla to the cream and bring to a boil.
When the cream reaches 60°C, add the gelatin and allow it to dissolve.
5. Put the mixture into a colander and melt it with the white chocolate.
Mix with a vermic mixer, wrap tightly and refrigerate for 8 hours.
Remove from refrigerator and whip in ice water.
- Chocolate ganache cream
54% dark chocolate: 50 g
Fresh cream 36%: 30g
Honey: 8g
Unsalted butter: 10g
[Preparation]
Melt the chocolate.
2. Add the syrup to the cream and bring to a boil in a microwave oven and mix well.
3. Mix the cream and chocolate to emulsify.
4. When the temperature drops below 40℃, add butter and stir until melted.
