Very nice recipe!! Btw, you rightly said that malai kofta to white hi hona chahiye. In United States, every restaurant makes red malai kofta. They repurpose the makhani gravy and it never taste good.

US has absolutely the worst Indian food outside of India. Apart from bad chefs, in general the quality of produce in North America as a whole is really bad. They use giant sized watery hybrid varieties of vegetables, fruits and meats which lack flavour. Those varieties were bred to increase weight, thus revenue, but lack the flavour found in older varieties which are smaller in size and irregular shape but have intense flavour. Even the milk in the US tastes of chemicals. Chicken tastes like potatoes. Just a few months ago there was news that dairy farmers in Canada have started feeding palm oil to cows, as a cheap source of calories, which has altered the composition of butter and its melting point has increased. Good quality produce in north America can only be found in some small farmers markets and is quite expensive. Supermarket produce there is absolute worst. Outside India, best Indian food can be found in south east Asia, like Malaysia, where they use the same varieties of produce and Indians of all strata have also settled in large numbers since generations. Also in many African countries.

My favourite dish......lekin ap ka bananey ka style ...yeh to try karna hi parega...just tempting!!!
