There is an episode of I Love Lucy where Lucy finds out that Ricky’s favorite dish is arroz con pollo. Of course, she and Ethyl decide to make it one evening for Ricky’s birthday. They are clueless about making rice and Lucy asks Ethyl, “You figure about three cups (uncooked) per person?” Ethyl agrees that sounds right. They put it in a smallish saucepan, and of course it boils over and rice just keeps spilling over onto the stove and onto the floor. It’s ridiculous, but it’s fun.

My mother used to make this (with some slight differences). Of all of her dishes, this was always my favorite. Although I was present on many occasions, I never thought to write down the recipe. Because she passed before my step-father, her recipe box was lost to me. I never thought I would have the chance to taste this dish again. Until now. I can never thank you enough for sharing this.

My mom makes thus too with some differences. I believe she cooks to separate the chicken from the rice but it still looks so delicious

I wish Miss Rachel was my neighbor! She’s so lovely and I know she’d be the favorite house in the neighborhood

En mi país le decimos Pollo con Arroz, aunque tiene más arroz que pollo, el pollo complementa al arroz. Crecí disfrutando del arroz con pollo de mi madre y de mi abuela, ambos muy diferentes. Mi mamá hacía uno regular, con la salsa y condimentos y no le gusta el ajo. A mi abuelo no le gustaba la comida condimentada pero sí el ajo. Así es que mi abuela condimentaba su arroz con pollo sólo con sal, pimienta, ajo, orégano y perejil bien picaditos. Si bien todo era blanco, era delicioso.

I want to say Thank you and to tell you how much your lessons have helped me. I am currently in a Rehabilitation facility after experiencing a very serious illness in June of 2024. I am very close to being able to move back into an apartment and ESPECIALLY to be able to cook for myself (institutional food is pretty awfu)awful. Your demonstrations have helped me learn how to cook many dishes that I had never expected to be able to do and come up with something that is healthy AND inexpensive AND authentic. You are very patient, especially as compared to many others who purport to teach cooking. You have given me a new challenge, which I badly need. Your upbeat attitude is a pleasure to behold, and I can't WAIT to get back home and try them myself. Thank you is inadequate, but I can only say it again. Your cooking is exactly how my mama used to cook for us. When she would make this dish for us, she would serve it with fresh homemade pinto beans, and she would do the same thing put butter on her corn tortilla every now and then on her flour tortillas as well. Your recipes and your cooking always hits home cause it’s how our mother used to cook for us, now I cook the same way. My mom taught me also how to make it and it was exactly like the way your mom taught you. But I now make it exactly the same way except instead of sauteing the chicken. I boil the chicken and use the water or broth from the chicken and I don't use any oil at all because of our age now we really can't afford to be eating food with oil in it. Thank you for the memories

As I'm watching you make your arroz con pollo, I can smell just how delicious your kitchen is smelling. This is a dish we all grew up eating and are still eating today. I love your recipe as it's very similar to mine. I remember that molcajete well as that was my introduction to cooking as mama would have me grind her spices for you.
