In the video above, I'll be explaining the Apple Watch Ultra Water lock feature.
This feature is common in Apple Watches and can be automatically enabled when the Apple watch detects water. You can manually enable it when you're about to dive into the water.
Not only that, it can be used to remove water from the Apple Watch Ultra after your swimming session.

You hold and press if you have watch OS 9 or later. OS 8 and earlier you have to rotate the crown.

You can’t take pictures with a watch 😂
Only Siri comes up when I hold the crown

How did you get the compass on the outside ring of the watch face?

Click on the border of the watch. It will switch back and forth with the compass or elevation and coordinates (whichever you selected for that face, within the settings)
