I love apples and I love coconut! What happens when you use two together in this fluffy and delicious cake? The most unique combination!

APPLE-COCONUT CAKE
You will need:
Dry ingredients:
♥ 220 g (1½ cup) cake flour
♥ 50 g (1 cup) coconut flakes
♥ 1 tsp baking powder
Sift flour in a medium mixing bowl and add coconut flakes and baking powder. Mix well set aside.
Wet Ingredients:
♥ 220 g butter ( at room temperature)
♥ 4 eggs ( at room temperature)
♥ 220 g (1 cup) granulated sugar
♥ zest from1 lemon
♥ juice 1 lemon (about 2-3 tablespoons)
1 large or two small Granny Smith Apples
Optional: You could add 1 teaspoon of Limoncello Liqueur or Vodka to lemon zest. This will intensify the flavor.
For decoration:
2 small apples, peeled and cored and cut in half, with some vertical cuts made.
2 tablespoons of granulated sugar( sprinkled over the apples)
3 tablespoons coconut flakes.
Bake your cake at 385°F(200°C) for 45-50 minutes.
