Ancient Mayan food in Quintana Roo, Mexico!

One of the experiences I really wanted to have when I visit the Quintana Roo state of Mexico, was to learn about, cook, and eat authentic ancient Mayan food. So we rented a van, and drove over to the small jungle Mayan village of Chunhuhub, to meet up with Kíichpam K'áax (selvabonita.com/en/home/), who are aiming to preserve their Mayan culture.
It was about a 3.5 hour drive to get to Chunhuhub from Playa Del Carmen, so by the time we arrived we were all pretty hungry. We walked through the milpa (Mesoamerican crop growing system), and finally to the kitchen within the jungle of the property.
They were already busy cooking, preparing a few traditional Mayan foods, like a variety of tamales and cochinita pibil. They prepared everything to be cooked in the pib, the ancient Mayan traditional way of cooking - an underground hot rock oven (there are many cultures around the world who have used or still use a similar underground cooking technique).
Tok-sel - One of the most fascinating dishes they cooked was white beans, and they took a hot rock out of the fire, stuck it into the pan with the beans, and roasted them with the rock. It was incredible to see, and the beans had an incredible ummai flavor to them. They were delicious especially when paired with freshly made corn tortillas.
Achiote (annatto) - An interesting ingredients, used commonly in Mayan food and cooking, is achiote, a pod filled with red / orange fruit. It has a slight pepper and lemony taste, and also makes everything that uses it, bright orange.
Cochinita pibil - One of the main ingredients in cochinita pibil is achiote. They had pre-marinated it, and it cooked underground as well. The flavor of the pork was amazing, and with tortillas, onions, and salsa, it was truly support.
We had a number of different tamales as well, all of which were totally different from any tamales I’ve ever had. They were hearty and packed full of corn and beans, and very filling. They were a little on the dry side, but I fully enjoyed learning about them, and watching them being made. The different leaves, including the hoja santa, was great to learn about.

    Most people would freak TF out watching a rock picked up from the ground with all kinds of dirt, charcoal, sand, and ash tossed into a pot to be mixed with your food, but Mark gets excited! This is why I love watching this channel!

    Mark I have to say a big thank you to you, Ying and Micah. If it wasn't for you all travelling to different countries and showing us each countries traditions especially food then I would miss out on seeing the world. Even if I could travel it would be highly unlikely that the opportunity to go to the places you do like small local restaurants, people's homes and some of the smaller villages. You have taught me over and over again that food is what brings everyone together whether we speak the same language or not. We all have to eat and sharing a table with the people from the country you are visiting can be an incredible experience. The drone footage is this video gave us a great view of the area and I really appreciate you taking the time to film it and integrate it into the video. Your relaxed attitude makes your videos a delight to watch. You seem to instinctively know what your audience likes to see. Thank you so much. Xx

    I'm an American white girl but I have GOT to say thank you for taking the time to show the TRUE SIDE of Mexican culture!! We see and here enough of bad that gets so focused upon. I live in Washington State, not Seattle areas .... the dry desert farming communities and we have a lot of mexican immigrants from all the different countries and if you get to truly know them ... they are AMAZING people. Warming, comforting, loving, family oriented and respectful souls!!! You show the values they have as well as their AMAZING foods!! Growing up here I had more Hispanic friends than anything!! Every Sunday is filled with music, the smell of grills and food ... laughing and kids playing. Love it, thank you for showing the TRUE PARTS OF MEXICO

    So interesting! In Jamaica we use anatto in our cooking also and we do the same tomale but we call it 'tie-a-leaf'. So cool how the Taino Indians left their culture in our cooking. Our jerk style of cooking meat is influenced by them too. Authentic jerk is cooked on smoldering pimento logs and covered by more branches of the pimento tree.

    Mark I love that Ying and Micah come with you everywhere, what incredible bonding that must be. It would be so easy to say "I travel for work", "this is my job" and say you didn't want distractions but you don't! I wish we got to see more of Ying!     Fun fact! Naranja or sour orange is the original orange used throughout Asia, Europe and the middle East. The sweet orange, which is what we call orange these days is a hybrid between sour oranges and Mandarin oranges that the Chinese developed. Sour orange is still used in Hispanic America for juice and marmalade.

    Your work is really breaking out, and its a delight to watch. I loved the confidence you started this episode with, and your off-line research and leg work really showed. This was food at what I consider the pinnacle, and as many viewers have shared analogous experiences this is how you really immerse yourself in a culture and transform from the experience. I bet when you had completed the day, one of the things you walked away knowing in your heart is that the Mayan culture is not dead - it has simply evolved as has all the world.     Talk about going deep! I think you give Trevor James a run for his money with how "Deep" you have gotten into the local context and culture. Mark, as a long time subscriber, it really has been magical to watch the transformation of your channel and of the breadth and depth of your excursions into different parts of the world for the sake of trying the best food. The first video of yours that I saw was the one where you were sitting on a 3-inch stool in a market in Saigon snacking on some Sup Cúa (Crab Soup) from a kind lady.     Most of the people know about tacos, enchiladas, quesadillas, tortas año Thats it!! But they dont know about the rest our culture and gastronomy. Thats only in Mérida. Every state has a diferent culture and diferent food flavor . MY COUNTRY IS YOUR COUNTRY 🇲🇽

    Ok let's stop for a sec and think about how we have being indoctrinated to just be able to appreciate the salty the savory the sweet tastes of our food the food we eat everyday, but then we go and try out spectacular new food with autochthonous roots true Mother Earth ingredients, when I think of the times I've had the chance to try traditional food, being young I could have triggered my own senses but I simply went for the city flavores.... I'll never miss a chance anymore I love how you made me realize that, I've been cooking for all my life and let me tell you mark, it's eye opening how awesome you got to taste everything and appreciate real food.     jesus roberto perez Luisito no habla solo de la comida de otro paises sino también visita monumentos y lugares culturales de otros países. Este hombre solo se dedica a probar comidas. Son dos personalidades diferentes...cada uno tiene lo suyo. No critiquen tanto que no se imaginan el trabajo que representa viajar día y noche, y tratar de mantener la sonrisa en días que un esta muy cansado. Estas personas tienen que ser fuertes para adaptarse a comer otras comidas, aguantar la diferencias de horarios de un continente a otro...no es un trabajo sencillo como te lo presentan.

    I'm so excited you went to Yucatan! My parents are originally from there and I've grown up eating most of those dishes here in the states. Makes me glad to see how you enjoyed the food. They are right when they say the hoja santa is very traditional...the lady said the elders mainly eat it. My mom watching over my shoulder didn't know what it was! The pib style cooking is something my parents sorely miss while in the US. It's not often that can be done in the area where we live. Roast chicken is done in the pib too. The onions are something you see very often in yucatec cuisine. They are marinated in lime juice or the sour orange you had at first. The "cupcake" tamale you had I've not seen that small before. More often I've seen it made larger and sliced like a pizza. Also, they have a version in which they place a whole habanero or two in the center so it perfumes the whole thing and makes it spicy. You would've liked that! At least they gave you the pounded habanero. There is some in my kitchen now haha. Wow, so much to comment on. Thanks for visiting!

    I am Mexican, have lived in Mérida and Campeche. Love Mayan food, maybe one of the best of Mexican dfood. Have never seen such an authentic Mayan food! Amazing. The redish sauce the Cochinita Pibil has is made with achiote. A mix of several spices. Delicious!

    My house burned down except for my brick outdoor kitchen, I have been making homemade tamales, bread, mole , and cook over coals. We live in an RV on the property , but now all my cookware is cast iron. We have a whole new better tasting life. Your face changes when you eat this food. thank you for this!

    I live in the Yucatan Penninsula and it makes me so happy to see you and your family enjoy the food of our ancestors. Btw, what you saw wasnt a lime or a lemon, its called Naranja Agria which translates to sour orange; its a special orange used to marinate dishes such as the cochinita pibil.

    With the electricity crisis we're experiencing in South Africa, glad I watched this video and learnt something new on how to cook food in the ground naturally instead of a conventional man made invention of the stove. In the Indian culture, on occasions we also cook on an outside fire and I must say that the food actually tastes far better than a pot on a gas stove. Natural resources like banana and other leaves also gives the food an added authentic taste and it looks as if we in South Africa will soon be left with no choice but to cook on an outside fire like back in the olden days

    Oooh this video brought back so many memories of my mom, aunts and uncles cooking at my grandparent's house in Tixpehual, Yucatan. Thank you for sharing our beautiful culture to the world. This is the real thing. My grandpa would cook small green pumpkins in the pib oven...they came out oozing with caramelized sugar! 😋

    I am kind of amazed at this, and proud that my Navajo culture shares cooking styles with the ancient Mayans! We also utilize the underground oven, for Kneel Down Bread and Navajo cake. The Kneel Down Bread is made of fresh ground corn wrapped inside of a corn husk and baked in the underground oven. Then the Navajo cake, is made with a dried ground corn flour consistency mixed with hot water, and a paste(corn flour mixture & human saliva). There is a layer of corn husks on the bottom of the oven and the corn mixture is poured in, while layering all sides and the top with corn husks. It is then covered with dirt and a built fire goes right on top of it. It cooks from dusk to dawn. They're both so good. The human saliva part is kind of unusual for an outsider, but normal if you're one of us.
