American French Girl Salad

Inspired by the deliciously simple, ridiculously satisfying salad of shredded carrots, parsley, lemon, and olive oil I love to snack on in Paris cafes! I decided to add a few more of my favorite sweet, crunchy root veg, smashed chickpeas, and a couple soft-boiled eggs to help fill me up and make the Citrus-Caper Shallot Vinaigrette extra glossy. And then I may have added everything bagel seasoning! This is my kind of health food!

    Trader Joes sells already cooked beets. I have never tried them, but I might give them a try and make this lovely salad!

    Hey daphne, use a small spoon under running water to peel your eggs and the shells just fly off so fast.

    That looks amazing. I like beets but have never used raw. Do you peel them or just wash really good and then chop up?

    Good question. How do you peel a raw beet? I usually cook and then peel and it comes right off.

    Don’t those carrots have a boat load of carbs? Could we sub with some shaved brussel sprouts or chopped broccoli? Everything else is looking delish! 😋

    Raw parsley doesn’t taste good at all ! We Asian cook the parsley but use lots cilantro and other herbs raw with bread and cheese or in the salad 😊 try it ! It would taste much better 👍

    Raw parsley is used in many Middle Eastern dishes. It is absolutely delicious especially in a salad. Google Tabouli. this is one of the most famous Middle Eastern salads we eat! If you try the salad, you will definitely change your mind.

    @@MK-gy1ug I was born in Iran and always use cilantro for My Tabouli ! We Persian cook a lot with parsley in our food ! Not dash of green ! 3 -4 bunch for a recipes but I personally I don’t like it raw 🤷🏼‍♀️

    I can't stand the taste of parsley. It makes me nauseous. I use dry parsley if I absolutely have to have parsley, which I rarely do. Fresh cilantro is my go to most of the time.

    Parsley is fine to use, but any fresh herbs are great- especially dill, cilantro, basil.
